ENDIVE GRATIN WITH HAM AND GRUYERE CHEESE

Endive Gratin with Ham and Gruyere Cheese image

Provided by Amy Finley

Categories     main-dish

Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 8

8 endives, intact but cored
4 tablespoons butter
8 slices low-sodium ham
2 tablespoons all-purpose flour
2 cups whole milk
Freshly cracked black pepper, for seasoning
1/8 teaspoon freshly grated nutmeg
8 ounces Gruyere cheese, grated

Steps:

  • Special Equipment: Steaming basket
  • Serving Suggestion: French baguette, sliced
  • Preheat oven to 350 to 375 degrees F.
  • In a large pot fitted with a steaming basket, bring 1-inch of water to a boil. Place the endives in the basket, cover, and let cook until very soft, about 10 to 15 minutes. Transfer to a colander and let drain, pushing down on the endives with a clean kitchen towel until as much of the water as possible has been expelled. Do not mush the endives!
  • In a large frying pan over medium-high heat, melt 2 tablespoons of the butter. When the foam has subsided, add the endives and cook, turning occasionally, until brown and caramelized on all surfaces. Remove from heat and wrap each endive in 1 slice of the ham. Set aside.
  • In a small saucepan over medium heat, melt the remaining 2 tablespoons of butter. When the foam has subsided whisk in the flour and cook 1 minute, being careful not to brown the flour. Whisk in the milk in a slow, steady stream. Bring to a boil whisking constantly, then reduce heat to medium-low and simmer until thickened, about 8 minutes. Season with a generous amount of pepper and the nutmeg.
  • Spread about 1 cup of the sauce over the bottom of a 9 by 13-inch flameproof ceramic baking dish, then arrange the ham-wrapped endives on top in a single layer. Cover with the remaining sauce and the cheese. Bake until the cheese is melted and the sauce is bubbling, about 30 minutes. Turn on the broiler, transfer the pan to the top rack, and broil until the cheese has patches of golden goodness - about 2 minutes. Serve hot with generous amounts of sauce and baguette slices.

SAVORY GRUYèRE BREAD WITH HAM

Savory Gruyère Bread With Ham image

The ham and cheese-filled loaf is the savory quick bread you didn't know you needed. We love it with Gruyère, but sharp cheddar works just as well.

Categories     cookbooks     Bread     Cheese     Ham     Green Onion/Scallion

Number Of Ingredients 11

4 tablespoons (½ stick/56 grams) unsalted butter, melted and cooled, plus more for the pan
2½ cups (325 grams) all-purpose flour, plus more for the pan
1½ teaspoons baking powder
1 teaspoon fine sea salt
½ teaspoon baking soda
1 cup (180 grams) coarsely chopped ham
3 tablespoons thinly sliced scallions, white and green parts (optional)
1 tablespoon chopped fresh thyme leaves
2 cups (8 ounces/198 grams) grated Gruyère or sharp cheddar cheese
2 large eggs
1 cup (240 milliliters) buttermilk

Steps:

  • Heat the oven to 350ºF. Butter and flour a metal 9 × 5-inch loaf pan and set it aside.
  • In a large bowl, whisk together the flour, baking powder, salt, and baking soda. Stir in the chopped ham, scallions if using, thyme, and 1¾ cups (7 ounces) of the Gruyère (reserving the rest for topping). In a separate bowl, whisk together the melted butter, eggs, and buttermilk. Add the wet mixture to the flour mixture and stir to combine. The batter will be thick.
  • Transfer the batter to the prepared loaf pan and spread it out evenly, smoothing the top. Sprinkle the remaining ¼ cup (1 ounce) cheese over the top. Bake until the top springs back when lightly pressed and a skewer inserted in the center comes out with some moist crumbs attached, 45 to 55 minutes.
  • Transfer the pan to a wire rack and let it cool for 10 minutes. Then remove the bread from the pan and let it cool completely on the wire rack.

Provided by Bibi

Time 1h20m

Yield 6

Number Of Ingredients 15

cooking spray
1 pound frozen shredded hash browns, thawed
¼ cup salted butter, melted
1 tablespoon butter
½ cup chopped red bell pepper
½ cup chopped fresh mushrooms
3 medium scallions, chopped
¼ teaspoon salt, divided
¼ teaspoon ground black pepper, divided
½ cup fresh spinach, chopped
7 large eggs
¼ cup heavy cream
1 cup shredded Gruyere cheese, divided
3 slices Gruyere cheese
1 cup diced cooked ham

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9-inch quiche or pie pan with cooking spray.
  • Place thawed, shredded hash browns on paper towels and lightly press with another paper towel, to remove excess moisture.
  • Pour hash browns in the prepared pan, and press on the bottom and up the sides of the pan to form a crust. Brush the sides and bottom of the hash brown crust with melted butter. Use a piece of parchment paper or plastic wrap to press the potatoes firmly on the bottom and sides of the pan again, making sure there are no gaps.
  • Bake crust in the preheated oven until crust is lightly browned, 15 to 20 minutes, adding 5-minute increments if needed. Reduce oven temperature to 375 degrees F (190 degrees C).
  • While the crust is baking, melt 1 tablespoon butter in a small skillet and cook the chopped red bell pepper, chopped fresh mushrooms, and chopped scallions, stirring frequently, until the vegetables are tender, 4 to 5 minutes. Add 1/4 teaspoon salt and pepper. Add chopped spinach and cook until spinach is just wilted, 1 to 2 minutes. Set cooked vegetables aside and allow to cool.
  • Beat eggs, cream, and remaining salt and pepper together in a medium mixing bowl. Stir in cooked vegetables and 1/2 cup shredded Gruyere cheese.
  • Place sliced Gruyere cheese on the bottom of the baked crust, cutting to fit. Sprinkle diced ham on top of the sliced Gruyere, and pour egg mixture over all. Sprinkle remaining shredded Gruyere on top.
  • Bake in the preheated oven until the center of the quiche is set, and a knife inserted in the middle comes out clean, 30 to 35 minutes. Cool on a rack for about 15 minutes. Slice and serve warm, or at room temperature.

CHICKEN ESCALOPES WITH LEMON AND SERRANO HAM

Chicken Escalopes With Lemon and Serrano Ham image

Chicken escalopes are flattened chicken breast fillets - they cook quicker than normal breast portions and absorb flavors more readily. Can be assembled in advance. Can substitute boneless chicken thighs for breasts and bacon or prosciutto for serrano ham. If using chicken thighs, spread apart, no need to flatten with rolling pin.

SPAETZLE BAKED WITH HAM AND GRUYERE

Spaetzle Baked With Ham and Gruyere image

This came to me in an email from Cooking Light and it looks like a fun adventure, especially the spaetzle making! Sounds like excellent comfort food for the fall so I am putting it here for safekeeping.

Categories     < 60 Mins

Time 1h

Yield 6 serving(s)

Number Of Ingredients 12

1 2/3 cups all-purpose flour
1 teaspoon salt, divided
1/4 teaspoon baking powder
2 1/4 cups skim milk, divided
4 large eggs, divided
2 quarts water
cooking spray
1 cup onion, chopped fine
3/4 cup turkey ham, diced (about 4 ounces)
2 tablespoons all-purpose flour
1/4 teaspoon black pepper
3/4 cup gruyere cheese, shredded (3 ounces)

Steps:

  • Preheat oven to 375°.
  • Lightly spoon flour into dry measuring cups; level with a knife. Sift together 1 2/3 cups flour, 1/2 teaspoon salt, and baking powder. Combine 3/4 cup milk and 2 eggs, stirring with a whisk. Add milk mixture to flour mixture, stirring with a whisk until combined. Let stand 10 minutes.
  • Bring 2 quarts water to a boil in a large saucepan. Hold a colander with large holes (about 1/4-inch in diameter) over boiling water; spoon about 1/2 cup dough into colander. Press the dough through holes with a rubber spatula (droplets will form spaetzle); set colander aside. Cook 3 minutes or until done (spaetzle will rise to surface). Remove with a slotted spoon; drain in a strainer (spaetzle will stick to a paper towel). Repeat procedure with remaining dough.
  • Heat a medium nonstick skillet coated with cooking spray over medium heat. Add onion; cook 5 minutes or until lightly browned, stirring frequently. Remove from heat; stir in ham. Combine spaetzle and onion mixture in a 2-quart baking dish coated with cooking spray, tossing gently.
  • Combine remaining 1/2 teaspoon salt, 1 1/2 cups milk, 2 eggs, 2 tablespoons flour, and pepper, stirring with a whisk. Pour milk mixture over spaetzle mixture. Sprinkle evenly with cheese. Bake at 375° for 35 minutes or until cheese is lightly browned.

Tips:

  • For the best results, use thin-sliced chicken breasts or chicken cutlets. If you are using thicker chicken breasts, you can pound them out with a meat mallet until they are about 1/4-inch thick.
  • Season the chicken breasts with salt and pepper before cooking. This will help to enhance the flavor of the chicken.
  • Cook the chicken breasts over medium heat. This will help to prevent them from becoming dry or overcooked.
  • Do not overcrowd the pan when cooking the chicken breasts. This will help to ensure that they cook evenly.
  • Once the chicken breasts are cooked through, remove them from the pan and set them aside. Cover them with foil to keep them warm.
  • While the chicken breasts are cooking, prepare the ham and Gruyère cheese. Cut the ham into thin slices and grate the Gruyère cheese.
  • To assemble the chicken escalopes, place a slice of ham and a slice of Gruyère cheese on each chicken breast. Fold the chicken breasts in half and secure them with toothpicks.
  • Return the chicken escalopes to the pan and cook them for a few minutes more, until the cheese is melted and bubbly.
  • Serve the chicken escalopes immediately with your favorite sides.

Conclusion:

Chicken escalope with ham and Gruyère cheese is a quick and easy meal that is perfect for a weeknight dinner. The chicken is tender and juicy, and the ham and Gruyère cheese add a delicious flavor. This dish can be served with a variety of sides, such as mashed potatoes, roasted vegetables, or a simple salad.
