Time 13m

Yield 6 servings

Number Of Ingredients 9

1 1/2 pounds seedless Red Flame grapes, stems removed (approximately 4 cups)
1 tablespoon red-wine vinegar
1/2 cup water
2 teaspoons grated lemon rind
1 1/2 tablespoons lemon juice
1 tablespoon honey
1 tablespoon shredded mint leaves
1 tablespoon Cognac or other brandy (optional)
1/2 cup sour cream

Steps:

  • Place grapes, vinegar and water in a stainless-steel saucepan and bring to a boil over high heat. Reduce heat to low, cover and cook gently for about 5 minutes. The grapes will lose their red color and begin to crack open.
  • Meanwhile, in a bowl combine the lemon rind, lemon juice, honey and mint leaves. When grapes are cooked, add them to lemon-honey mixture and stir well. When cool, add the Cognac. Serve in wine glasses, garnished with a spoonful of sour cream.

Tips:

  • Select the right grapes: Use firm, ripe, and flavorful grapes. Avoid grapes that are bruised or have blemishes.
  • Chill the grapes: Chilled grapes are more refreshing and hold the cream topping better.
  • Use fresh whipped cream: Freshly whipped cream provides a light and airy texture and superior flavor compared to store-bought whipped topping.
  • Add flavorings to the whipped cream: Experiment with different flavors such as vanilla extract, almond extract, or citrus zest to enhance the cream topping.
  • Garnish with nuts or herbs: Chopped nuts, such as pistachios or almonds, or fresh herbs, like mint or basil, add an extra layer of flavor and visual appeal to the dish.
