TROPICAL FRUIT SALAD

Tropical Fruit Salad image

The winning trio of sliced pineapple, kiwifruits, and papaya means this is not your average bowl of fruit salad. To top off the tropic theme and add a welcome crunch, toasted coconut flakes are sprinkled on top before serving.

Time 15m

Yield Serves 6 to 8

Number Of Ingredients 4

1/4 cup unsweetened coconut flakes
1/2 pineapple, cored and sliced
2 kiwifruits, peeled, halved lengthwise, then sliced into half-moons
1 small papaya, peeled, seeded, and sliced

Steps:

  • Preheat oven to 325°F. Place 1/4 cup unsweetened coconut flakes on a rimmed baking sheet and toast, stirring once, until golden and fragrant, 5 to 7 minutes; let cool.
  • In a large bowl, toss pineapple and kiwifruits to combine, along with any accumulated juices. Add papaya to mixture and gently toss to combine. Sprinkle with toasted coconut flakes; serve.

Tips:

  • For a quicker and easier version of this salad, use pre-cooked turkey and store-bought dressing. You can also add other fruits and nuts to your liking, such as diced apples, celery, or walnuts.
  • If you don't have any fresh fruit on hand, you can use frozen or canned fruit instead. Just be sure to drain the canned fruit well before adding it to the salad.
  • To make a lighter version of this salad, use a low-fat or fat-free mayonnaise. You can also use Greek yogurt instead of mayonnaise.
  • This salad can be served on its own or on top of a bed of lettuce. It's also a great filling for sandwiches or wraps.

Conclusion:

This quick and easy turkey salad is perfect for a light lunch or dinner. It's also a great way to use up leftover turkey after a holiday meal. With just a few simple ingredients, you can create a delicious and satisfying meal that the whole family will enjoy.
