This easy Hedgehog Slice is super simple and needs just SIX ingredients! Both regular and Thermomix instructions included.

500 grams Marie Biscuits (2 packs)
250 grams butter
3 tablespoons cocoa
4 tablespoons desiccated coconut
395 grams sweetened condensed milk
180 grams milk chocolate

Steps:

  • Line a 20cm x 20cm square tin with baking paper. Make sure you leave plenty hanging over the edges to help you remove the slice once it has set.
  • Place one pack of biscuits into a food processor and blitz until finely crushed, add the second pack and blitz again until they have broken into large pieces. Alternatively you can just use a rolling pin to crush your biscuits! Place the crushed biscuits into a large bowl and set aside until needed.
  • Melt the butter using a microwave safe bowl and cooking for 30 second spurts until it has just metled.
  • Pour the melted butter into the bowl with the crushed biscuits and add the sweetened condensed milk, cocoa and coconut. Using a large metal spoon, mix until the ingredients are combined. Pour the mixture into your prepared slice tin and flatten the surface with the back of a spoon.
  • Place the milk chocolate into a microwave safe bowl and cook for 30 second spurts (mixing in between) until it's just melted. Pour over the top of the slice and place in the fridge for two hours or until set.

1 lb broken biscuits (shortbread) or 1 lb cookie (shortbread)
1 cup butter
2 cups sugar (fine grain)
1 cup sultana (raisins)
1/4 cup unsweetened cocoa
3 eggs, beaten
2 cups powdered sugar
4 tablespoons unsweetened cocoa
2 tablespoons melted butter
2 tablespoons milk (or enough to get a good spreading consistency)

Steps:

  • Break up biscuits into bits. Not crumbed, just pieces no larger the size of a quarter.
  • In large pan melt the butter, then add the sugar, sultanas and cocoa. Heat and keep mixing until hot but not boiling.
  • Take off the heat.
  • Mixing very quickly, add the beaten eggs in small amounts incorporating each lot before adding the next.
  • Fold in broken biscuits.
  • Press mixture into a foil lined tray (30x25cm).
  • Refrigerate to set for a couple of hours.
  • To make the icing / frosting:.
  • Mix the icing sugar, 4 T cocoa and 2 T melted butter with enough milk to give a spreadable consistency.
  • Beat until smooth.
  • Spread over the hedgehog and leave until it has set.
  • I store this slice in the refrigerator.

2/3 cup butter
1/2 cup caster sugar
2 tablespoons cocoa
2 tablespoons desiccated coconut
1 egg, beaten
1/2 cup walnuts, chopped
1/2 cup glace cherries, chopped
1/2 teaspoon vanilla essence
2 cups crushed plain sweet biscuits (for you Americans, that's like graham cracker crumbs!)

Steps:

  • Grease lamington pan/slice tray.
  • Melt butter and sugar together, stir in cocoa.
  • Remove from heat and stir in vanilla and coconut.
  • Add egg, then walnuts and cherries.
  • Mix in biscuit crumbs; press into pan and refrigerate until firm and cooled, only needs about an hour.
  • You can ice this with chocolate icing if you wish; I prefer to leave it plain and press some extra shredded coconut on top before refrigerating!
