1 (15 ounce) package refrigerated pie crusts
1 cup mozzarella cheese, shredded
3/4 cup sliced pepperoni, chopped
3/4 cup pizza sauce
1 teaspoon dried Italian seasoning

Steps:

  • Heat oven to 450°F.
  • Place pie crusts on cutting board; cut each crust into quarters, making 8 wedges.
  • In a medium bowl, combine the cheese, pepperoni, pizza sauce and seasoning and mix well.
  • Place 1 heaping tablespoon filling on half of each crust wedge.
  • Fold unfilled sides of wedges over filling and press edges with a fork to seal.
  • Place on ungreased baking sheet and bake for 12-14 minutes or until crusts are golden brown.

1 teaspoon white sugar
1 cup warm water (110 degrees F/45 degrees C)

1 large onion, coarsely chopped
1 tablespoon olive oil
1 (12-oz) bottle roasted red peppers, patted dry and coarsely chopped
4 (7-inch) flour tortillas
2 oz pepper Jack cheese or mozzarella, coarsely grated (1/2 cup)

Steps:

  • Preheat oven to 475°F.
  • Cook onion in oil in a large heavy skillet over moderate heat, stirring, until softened, about 6 minutes. Stir in peppers and salt and pepper to taste.

1/4 cup chopped drained oil-packed sun-dried tomatoes
1 tablespoon chopped fresh basil or 1 teaspoon dried, crumbled
1 tablespoon chopped fresh oregano or 1 teaspoon dried, crumbled
2 small Boboli pizza shells (1 8-ounce package)
1/4 cup purchased pizza sauce
1/4 cup grated Parmesan
1/4 cup grated mozzarella
2 ounces goat cheese, crumbled

Steps:

  • Heat oil in heavy large skillet over medium-low heat. Add zucchini, sausage and mushrooms and sauté until vegetables are almost tender, about 5 minutes. Add sun-dried tomatoes and sauté until vegetables are tender, about 3 minutes longer. Remove skillet from heat; stir in basil and oregano.

  • In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink; drain. Add the tomato sauce, tomato paste, water, garlic, sugar, Italian seasoning and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until heated through., Cut 1/4 in. off the top of each roll; set aside.
