PORK TOMATO & BEAN STEW

Pork Tomato & Bean Stew image

Cheap family favourite

Provided by linzmilner

Time 40m

Yield Serves 4

Number Of Ingredients 0

Steps:

  • Heat 1 tbsp oil in a frying pan and cook pork until browned, remove pork and set aside, leaving the fat in the frying pan.
  • add the rest of the oil to the frying pan and cook the onion until soft. Add the garlic and red pepper for 2-3 minutes and add the pork.
  • Stir in the chopped tomatoes, rosemary and 100ml of water. Cover and simmer for 15 minutes.
  • rinse the beans and add to the pan, cover again and simmer for a further 5 minutes.
  • Mix the cornflour with 2 tbsp of coldwater and add to the pan, continue to heat until simmering and slightly thickened.
  • Serve with rice or potatoes.

Tips:

  • Choose ripe tomatoes: This will ensure a sweeter, more flavorful stew. If using canned tomatoes, choose whole or diced tomatoes in juice, not sauce.
  • Brown the pork: This will help to develop its flavor and give the stew a richer color. If you don't have a lot of time, you can skip this step, but the stew will be less flavorful.
  • Use a variety of vegetables: This will add color, texture, and flavor to the stew. Some good options include carrots, celery, onion, potatoes, and green beans.
  • Season the stew well: This means using a combination of salt, pepper, and other spices. You can also add a splash of acidity, such as lemon juice or vinegar, to brighten the flavors.
  • Simmer the stew for at least 30 minutes: This will allow the flavors to meld together and the pork to become tender.
  • Serve the stew with your favorite sides: Some good options include mashed potatoes, rice, or crusty bread.

Conclusion:

This quick tomato pork stew is a delicious and easy-to-make meal that is perfect for a busy weeknight dinner. It is also a great way to use up leftover pork. With a few simple ingredients and a little bit of time, you can have a hearty and flavorful stew that the whole family will enjoy.
