QUINCE WITH CIPOLLINI ONIONS AND BACON

Quince With Cipollini Onions and Bacon image

English settlers most likely brought quince seeds to Connecticut, where orchards now fill with them every fall. This year, the chef Eric Gorman's White Silo Farm and Winery in Sherman, which specializes in fruit wines, held its first weekend quince festival, with a number of quince dishes to taste. He plans to serve this one, combining quinces with bacon and onions, for Thanksgiving at the farm. A pinch of nutmeg (we are speaking of the so-called Nutmeg State, after all) adds spice.

Time 45m

Yield 6 servings

Number Of Ingredients 9

1 pound cipollini onions
2 1/2 to 3 pounds quinces (about 5), peeled, cored and cut into 1-inch chunks
6 tablespoons pure syrup
1/2 pound thick-cut bacon
4 tablespoons good quality balsamic vinegar
3/4 teaspoon ground nutmeg
Salt and ground black pepper
1 tablespoon chopped flat-leaf parsley leaves
Leaves from 5 sprigs fresh thyme

Steps:

  • Bring 2 quarts water to a boil, add the onions, turn off the heat and let sit 5 minutes. Drain and allow to cool.
  • Heat oven to 425 degrees. Toss quinces with half the maple syrup and spread in a single layer in a large baking pan. Bake 25 minutes, until tender.
  • Peel and trim the onions. Quarter large ones; cut small ones in half. Fry bacon in a large sauté pan over medium heat until browned. Remove and drain on paper towels. Pour off all but 2 tablespoons of the bacon fat. Add onions to the pan and sauté on medium until lightly browned, about 6 minutes.
  • Cut bacon strips in 3/4-inch pieces. Add to pan with onions. Reduce heat to low. Add remaining maple syrup and the vinegar. Fold in quince. Add nutmeg and season with salt and pepper. Add parsley and thyme. Gently fold ingredients together. Cook a few minutes, then serve warm.

CARAMELISED ONION QUICHE WITH CHEDDAR & BACON

Make quiche Lorraine to perfection every time with this easy recipe for a crisp pastry base and rich smoked bacon, cheese and thyme filling

Provided by Good Food team

Categories     Buffet, Dinner, Lunch, Main course, Supper

Time 1h25m

Yield Cuts into 6 - 8 slices

Number Of Ingredients 11

25g butter
2 large onions, halved and thinly sliced
1 tbsp fresh thyme leaves, plus a few sprigs
350g shop-bought shortcrust pastry
plain flour, for dusting
200g pack smoked bacon lardons
300g pot double cream
100ml milk
3 large eggs
2-3 pinches of nutmeg, plus extra for the top
140g mature cheddar, grated

Steps:

  • Melt the butter in a large non-stick frying pan, add the onions and cook for 20 mins, stirring now and then, until they are soft and golden brown. Season, stir in the thyme leaves, then transfer to a plate to cool.
  • Heat oven to 200C/180C fan/gas 6 with a large baking sheet inside. Roll out the pastry on a lightly floured surface until large enough to line a 25cm loose-bottomed tart tin, with a little overhang of pastry all the way round the top. This will stop the pastry shrinking in the oven later. If there is more overhang than you need, trim off the excess with scissors. Gently press the pastry into the sides of the tin and prick the base with a fork. Chill for 15 mins.
  • Line the pastry case with a sheet of baking parchment and fill with ceramic baking beans. Bake for 15 mins on the hot baking sheet (this helps to prevent a soggy bottom). Carefully remove the parchment and beans, then return to the oven for 10 mins more until the pastry looks cooked like shortbread, but is not too brown.
  • Meanwhile, put the bacon in the pan you cooked the onions in (there's no need to wash it first or add any oil) and fry for 10 mins until golden. Lift from the pan onto kitchen paper to remove any excess fat. Beat the cream, milk and eggs with seasoning and nutmeg, then stir in the bacon and half the cheese.
  • Remove the pastry case from the oven and reduce heat to 190C/170C fan/gas 5. Spoon the caramelised onions evenly over the base of the pastry case. Pour in the bacon mixture, then scatter with the remaining cheese, the thyme sprigs and a little nutmeg. Bake for 25-30 mins until golden and the filling is just set with a slight wobble in the centre.
  • Trim the excess pastry and leave to settle for 10 mins, then remove from the tin and slice.

Tips:

  • Choose ripe quinces: Look for quinces that are firm, have a yellow or golden color, and are free of blemishes.
  • Peel the quinces carefully: The skin of quinces is very thin and can be difficult to peel. Use a sharp knife to score the skin around the core of the quince, then use your fingers to peel the skin away.
  • Cook the quinces until they are tender: Quinces can take a while to cook, so be patient. Cook them over low heat until they are soft and can be easily pierced with a fork.
  • Use a variety of spices: Quinces pair well with a variety of spices, such as cinnamon, nutmeg, ginger, and cloves. Experiment with different combinations to find your favorite flavor profile.
  • Serve the quinces warm or cold: Quinces can be served warm as a side dish or dessert, or they can be chilled and served as a refreshing snack or appetizer.

Conclusion:

Quince is a delicious and versatile fruit that can be used in a variety of dishes. Its unique flavor and texture make it a great addition to both sweet and savory recipes. Whether you are looking for a new side dish, dessert, or snack, quinces are a great option. So next time you see quinces at the market, be sure to give them a try!
