CURRIED QUINOA AND CHICKPEAS

Curried Quinoa and Chickpeas image

Quinoa contains more protein than other grains, and that protein is of unusually high quality for a plant food. That makes this a great filling main dish and the blend of flavors and colors will bring everyone at the table back for more. -Suzanne Banfield, Basking Ridge, New Jersey

Lemon-Tahini Quinoa with Raw Chickpeas image

On a slow day, I tried sprouting chickpeas. After eating quite a few, I tried planting a few. They grew into the most beautiful seedlings I have ever seen. And now I am harvesting fresh garbanzo beans. I tossed them into a quinoa salad I make frequently with fresh peas. The results were excellent.

Categories     Grains

Time 40m

Yield 4 serving(s)

Number Of Ingredients 15

1 cup quinoa
1 cup water
3/4 cup fresh orange juice (about 2 oranges)
1/2 teaspoon sea salt
2 oranges, zest of
1 tablespoon extra virgin olive oil
1 bunch green onion, finely chopped
3 garlic cloves, minced
1/2 cup raisins
1 cup chickpeas, cooked
1 bunch spinach, trimmed and washed
sea salt
1/2 teaspoon cinnamon
1/4 cup pine nuts (or walnuts)
1 orange, cut into wedges

Steps:

  • Rinse the quinoa well and drain in a fine-mesh sieve. Combine water and orange juice to equal 1 3/4 cups, and bring to a boil in a 2-quart saucepan. Add the sea salt, orange zest, and rinsed quinoa. Return to boil, reduce heat, cover, and simmer for 15 minutes, or until all the liquid has been absorbed. Remove from heat and let sit, covered, for 10 minutes to fluff up.
  • While the quinoa is cooking, heat the oil in a large skillet that has a tight-fitting lid. Add the onions and saute over medium-high heat for 10 minutes, until they have softened and started to brown a bit. Add garlic and saute until golden.
  • Add raisins, chickpeas, and chopped spinach. Cover and cook over medium heat for 5 minutes, or just until the spinach has wilted. Adjust heat if necessary. Drain any excess water after cooking the spinach. Season to taste with sea salt.
  • To serve, fold the vegetables into the hot, cooked quinoa. Stir in cinnamon. Garnish with the toasted pine nuts (or walnuts) and orange wedges for a final squeeze of juice.

Tips:

  • Rinse the quinoa well before cooking. This will remove the saponins, which are bitter-tasting compounds that can make the quinoa taste soapy.
  • Use a 1:2 ratio of quinoa to water. This will result in perfectly cooked quinoa that is fluffy and not mushy.
  • Cook the quinoa in a covered pot over medium heat. Bring the water to a boil, then reduce the heat to low and simmer for 15 minutes, or until the quinoa is cooked through.
  • Fluff the quinoa with a fork before serving. This will help to separate the grains and make them light and fluffy.
  • Add your favorite seasonings and vegetables to the quinoa. This is a great way to customize the dish to your own taste. Some popular additions include diced tomatoes, chopped cilantro, and a squeeze of lime juice.

Conclusion:

Quinoa with chickpeas is a delicious, healthy, and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a good source of protein, fiber, and vitamins and minerals. It is also a relatively easy dish to make, and it can be tailored to your own taste preferences. So next time you are looking for a quick and easy meal, give quinoa with chickpeas a try.
