- Add in the wine and continue cooking until most of the liquid has evaporated, about 5 minutes.
- Add in the tomatoes, beef broth, tarragon, and chevril; season with salt and pepper; bring to a boil, and let boil until the sauce begins to thicken, about 5-7 minutes.
- Remove pan from heat.
- Arrange rabbit pieces in a large, greased baking dish, pour the sauce over the top; cover and bake until the rabbit is fork tender and the sauce nicely thickened, 30-35 minutes.
Tips:
- Use fresh, high-quality ingredients for the best flavor.
- Brown the rabbit meat well before adding the vegetables and stock. This will help to develop a rich, flavorful sauce.
- Use a variety of wild mushrooms for a more complex flavor. Some good options include chanterelles, morels, and shiitake mushrooms.
- Don't overcrowd the pan when cooking the mushrooms. They should be cooked in a single layer so that they can brown properly.
- Add a splash of white wine or brandy to the sauce for a little extra depth of flavor.
- Season the sauce to taste with salt, pepper, and herbs such as thyme, rosemary, and sage.
- Serve the ragout over mashed potatoes, rice, or pasta.
