1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 head Rainbow cauliflower, cut into 1-inch florets

Steps:

  • Preheat oven to 425 degrees F.
  • In a large bowl, combine olive oil, garlic powder, onion powder, salt, and pepper. Add cauliflower and gently toss until evenly coated. Place on rimmed baking sheet.

1 head cauliflower, trimmed and cut into florets
1 teaspoon dried oregano
½ teaspoon garlic powder
¼ teaspoon red pepper flakes
½ teaspoon sea salt
¼ cup shredded parmesan cheese
1 large egg

Steps:

  • Preheat the oven to 450˚F (240˚F). Line a baking sheet with parchment paper.
  • Add the cauliflower to the bowl of a food processor and pulse until it becomes the size of rice. Transfer the cauliflower to a microwave-safe bowl and microwave on high for 3 minutes, or until it begins to steam. Remove the cauliflower and place on a clean kitchen towel. Wrap the towel around it and squeeze out as much liquid as possible; wait for the cauliflower to cool a bit if it's too hot to handle.
  • Transfer the cauliflower to a large bowl and add the oregano, garlic powder, red pepper flakes, salt, Parmesan, and egg. Stir to combine.
  • Transfer the mixture to the baking sheet and use your hands to form it into a round disk, ½-inch (1 cm) thick and 10-inches (25 cm) in diameter. Bake for 25-30 minutes, or until the crust begins to brown.
  • Top the crust with your desired toppings and bake for another 10 minutes.

1/4 cup cherry tomatoes
1/2 small carrot, peeled and thinly sliced into rounds
1 inch diced yellow bell pepper (about 1/6th of a yellow pepper)
1/4 small red onion, thinly sliced
2 teaspoons extra-virgin olive oil
1 teaspoon kosher salt
3 tablespoons no-sugar-added tomato sauce
1/3 cup shredded shredded low-moisture full fat mozzarella cheese
1 teaspoon dried oregano, to garnish
crushed red pepper flakes, to taste
1 tablespoon chopped parsley

Steps:

  • Preheat oven to 450 degrees F.
  • Place the tomatoes, sliced carrot, bell pepper and red onion on a sheet tray in four separate rows. Drizzle the oil over the vegetables and season with salt. Roast the vegetables in the oven for 10-15 minutes, or until softened and just beginning to brown. Set aside to cool.

1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
¼ cup shredded Parmesan cheese
¼ cup mozzarella cheese
1 egg
¼ teaspoon salt
½ teaspoon garlic powder
½ teaspoon basil or rosemary (minced (or dry))
½ teaspoon oregano (minced (or dry))
1/2 cup marinara sauce
1 cup mozzarella cheese
1 cup diced bell peppers (yellow, orange, red, green, or any combo of your choice)
1/2 cup broccoli florets
1/2 cup diced red onion
1/4 cup canned corn (optional and not included in nutritional facts)
1/2 cup tomatoes (diced)

Steps:

  • Preheat oven to 500 degrees F.
  • Remove the stems from the cauliflower and cut into chunks, Place the cauliflower into a food processor and pulse it until it resembles the texture of rice. If you don't have a food processor, you can use a cheese grater or chop it very finely.
  • Microwave the processed cauliflower uncovered in a microwave safe bowl for approximately 4-5 minutes on high. Remove it from the microwave and allow it to cool for at least 4-5 minutes (trust me don't rush this step!). After the cauliflower is slightly cooled, place it in a kitchen towel and squeeze all the liquid out of it. Be sure to squeeze as much liquid as humanly possible.
  • Combine the cooked cauliflower, egg, garlic, cheese, and seasonings. Stir until a dough texture forms. Spread the cauliflower mixture out onto lightly greased parchment paper or a pizza pan in the shape of a pizza crust.
  • Bake the crust for approximately 10-15 minutes (depending on your oven), or until the crust is golden and crispy. I cooked mine for approximately 15 minutes. After the crust is golden remove it from the oven and top with pizza sauce then cheese then the chopped veggies.
  • Place the pizza back in the oven and bake for another 12-15 minutes.

2 packs cauliflower rice (400g)
1 whole egg & 1 egg yolk
¼ cup nutritional yeast
½ cup grated mozzarella & 1/2 cup grated protein cheese
1 tsp oregano
1 tsp dried basil
¼ tsp fine black pepper
½ pepper of each colour (red, yellow, green)
½ small onion
¼ cup frozen sweetcorn

  • Method
  • Preheat oven to 250C - the hotter the better
  • Mix all the ingredients well in a mixing bowl
  • Place a sheet of baking paper on an oven tray
  • Empty your mixing bowl contents into the centre of your baking tray
  • Pat down using your hands to flatten and form the round base - the thinner the better
  • Press down some kitchen roll to soak up the excess water - you may need 4-6 sheets
  • Switch oven to high grill and place tray with cauliflower base in the grill for 5mins
  • Whilst the cauliflower base cooks, chop up your toppings
  • Remove the cooked base when you see it brown and crisp on the edges
  • Add your grated cheese first, then layer your toppings
  • Grill in the oven for a further 5mins
