  • Whisk 1/2 cup vegetable oil, 1/3 cup rice vinegar, 3 tablespoons sugar, 2 tablespoons soy sauce and 2 teaspoons toasted sesame oil in a large bowl. Break two 3-ounce packages ramen noodles into bite-size pieces (discard the seasoning packets). Add the uncooked ramen to the vinaigrette along with one 16-ounce bag broccoli slaw mix, 1 cup julienned snow peas, 3/4 cup toasted slivered almonds and 4 chopped scallions. Season with salt and pepper and toss. Let sit 1 to 2 hours before serving.

  • For the dressing, combine vinegar, vegetable oil, sugar and the two flavor packets from the ramen noodles, set aside.

I recieved this recipe from my future sister-inlaw, Amy. She got the recipe from her aunt Diana. My family loves this slaw. I chilled my slaw sauce before using while preparing the other ingredients. When I made this I used white vinegar (I do not recommend Apple Cider Vinegar). I recommend using good quality Ramen noodles no off brands. I also use Sunkist Almond Accents roasted garlic caesar flavored sliced almonds. I also allowed my browned noodles, almonds and seeds to cool before mixing into the shredded slaw. Diana says "Do not pour sauce onto slaw mix until ready to serve or the noodles will become soggy".

1/2 head cabbage
1/2 cup butter
1/2 cup slivered almonds
1/4 cup white sesame seeds
6 ounces ramen noodles
1 cup canola oil
1/2 cup vinegar
3 tablespoons soy sauce
1/2 cup Splenda sugar substitute or 1/2 cup sugar

Steps:

  • Whisk together canola oil, vinegar, soy sauce and splenda. Set aside.
  • Melt 1 stick of butter.
  • While butter is melting crush dry raman noodles into bite size pieces. Remove the seasoning pack and discard (I reserve the seasoning for use in other dishes).
  • Add to the melted butter almonds, sesame seeds, and dry raman noodles. Cook until browned.
  • Shred 1/2 of the head of cabbage and set aside.
  • When ready to serve pour browned noodles, almonds and seeds into shredded cabbage toss. Add the slaw sauce and toss again.

12 ounces broccoli florets (chopped small-med size)
1 (12 ounce) bag broccoli coleslaw mix (bagged in produce section of grocery store)
1/4 cup sunflower seeds (kernels)
2 (3 ounce) packages ramen noodles (any flavor, I use the 'oriental' flavor, reserve 1 seasoning packet for dressing)
3 tablespoons butter
2 tablespoons olive oil
1/4 cup sliced almonds
3/4 cup vegetable oil (I use Canola)
1/4 cup brown sugar
1/4 cup apple cider vinegar
1/4 cup green onion, chopped (to garnish)

Steps:

  • Heat butter and olive oil in large saute pan.
  • Crush Ramen Noodles and add to pan along with almonds.
  • Saute for approx 5-7 minutes or until noodles and almonds are lightly browned. Set aside.
  • In very large salad bowl, combine broccoli, broccoli slaw and sunflowers.
  • Add toasted noodle/almond mixture and toss.
  • Make dressing by whisking together in a small bowl: vegetable oil, brown sugar, apple cider vinegar and the Ramen noodle seasoning packet.
  • Pour dressing over salad and toss.
  • Top with chopped green onions.

1/2 cup sliced almonds
2 teaspoons sesame seeds
1/2 cup sunflower seeds
1 (3 ounce) package ramen noodles (chicken or beef flavor)
1/3 cup olive oil
2 tablespoons sugar
2 tablespoons vinegar
1/2 teaspoon pepper
1 (10 ounce) bag broccoli coleslaw mix
4 green onions, chopped

Steps:

  • Spread almonds on a cookie sheet & top with sesame and sunflower seed. Toast in oven at 350 for 10 minutes. Put aside to cool.
  • Mix ramen noodle seasoning packet with the oil, sugar, vinegar & pepper.
  • Mix the broccoli and green onions together. Add the seeds and toss.
  • If you are going to serve within several hours, add the ramen noodles at this point and add the dressing.
  • Toss and chill several hours before serving.
  • If you are making the day before, don't add the noodles until several hours before serving.
