SPICY LENTIL SOUP
This is an adaptation of the lentil soup at my favorite Greek restaurant. You don't have to make it spicy, so feel free to modify it. You really can't substitute the red lentils though. If you can't find them at your supermarket, look for an Indian or Middle Eastern specialty store. They look red, but turn yellowish when cooked. Similar soups can be found in Turkey and other regions of the Middle East.

SPICY LENTIL AND SAUSAGE SOUP
This hearty soup is peppered with spicy sausage, ground spices and dried herbs, and fresh basil. The lentils are the perfect vehicle to carry the robust flavors from the red wine and hot sauce, and the tomato sauce ties everything together. This soup is rather spicy, so feel free to omit the hot sauce if you'd like to reduce the heat. The sausage can be substituted with vegan sausage or omitted altogether.

Steps:
- Heat the olive oil in a large pot over medium heat. Add the sausage and cook, breaking into small pieces with a wooden spoon, until browned, 4 to 5 minutes.
- Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the carrots, celery and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook until fragrant, about 1 minute.
- Push the ingredients to the sides of the pot to make a well in the center. Add the chili powder, cumin and paprika in the well and toast until fragrant, 1 minute. Season with 1/4 to 1/2 teaspoon salt and 1/2 teaspoon pepper and stir in the bay leaf.
- Stir in the chicken stock, tomato sauce, red wine and lentils. Increase the heat and cook until boiling, then reduce to a hearty simmer. Cover and cook until the lentils are cooked through, 30 to 35 minutes.
- Remove from the heat, then stir in the basil, hot sauce and lemon juice. Taste to adjust the seasoning and serve over quinoa if desired.

Tips:
- Choose the right lentils: For this recipe, it's best to use either brown or green lentils. They hold their shape well and won't disintegrate into mush.
- Rinse the lentils: Before cooking, rinse the lentils thoroughly in a fine-mesh sieve under cold running water. This will remove any dirt or debris and help prevent the soup from becoming cloudy.
- Sauté the vegetables: Sautéing the vegetables in a little olive oil before adding them to the soup enhances their flavor and adds depth to the dish.
- Use a good quality vegetable broth: The broth is the base of the soup, so it's important to use a good quality broth that has a rich flavor. You can use store-bought or homemade broth.
- Season to taste: Once the soup is done cooking, taste it and adjust the seasoning as needed. You may want to add more salt, pepper, or cumin to suit your taste.
- Serve with your favorite toppings: When serving the soup, offer a variety of toppings so that your guests can customize their bowls. Some popular toppings include chopped cilantro, plain yogurt, lemon wedges, and crispy fried onions.
Conclusion:
This spicy lentil soup is a delicious and hearty meal that's perfect for a cold day. It's packed with flavor and nutrients, and it's easy to make. Plus, it's a great way to use up leftover lentils. So next time you're looking for a quick and easy soup recipe, give this one a try. You won't be disappointed!
