Cajun Spiced Chicken & Potatoes image

I like this with a green salad for a quick weeknight meal. It's also lower in fat and calories. 15 minutes marinating time is included in the prep time.

I found this recipe to be a bit bland. I added some extra Cajun spices to the chicken and potatoes, and it turned out much better.

This dish was a little too spicy for me, but my husband loved it. He said the chicken was cooked perfectly and the potatoes were crispy on the outside and fluffy on the inside.

I'm not a huge fan of Cajun food, but I really enjoyed this dish. The chicken was moist and flavorful, and the potatoes were perfectly roasted. The Cajun spices were not too overpowering, and they gave the dish a nice kick.
