1 bottle dry white wine, such as pinot grigio

2 tablespoons hot sauce
1 tablespoon maple syrup
1/4 teaspoon paprika
Kosher salt
3 tablespoons crumbled blue cheese
2 tablespoons low-fat plain yogurt
1 tablespoon fresh lemon juice
1 5-ounce package baby arugula
3 stalks celery, thinly sliced
2 carrots, thinly sliced
Vegetable oil, for brushing
4 5-ounce skinless salmon fillets (about 1 inch thick)

6 salmon fillets or 1 whole salmon
3/4 cup hidden valley ranch salad dressing
2 tsp chopped fresh dill or 1/4 tsp dried dill weed
1 tsp chopped fresh parsley
lemon wedges
fresh dill sprigs optional

  • Preheat oven to 375 degrees f. Arrange salmon in large buttered baking dish. Mix together all ingredients except lemons and dill sprigs. Pour on top of salmon. Bake until fish flakes easily with a fork. Depending on thickness of salmon I usually cook 30 minutes. Serve with lemon wedges and dill sprigs if desired. Serve warm
