1 ounce cranberry juice
1 1/2 ounces sour mix (can substitute margarita mix)
1 ounce tequila (the better the tequila the better the drink)
1/2 ounce raspberry liqueur (Prefered is Razzmatazz)
1/4 lime, juice of (Fresh is best but Rose's will do in a pinch)

Steps:

  • Shake all ingredients together in a tin. Serve on the rocks (use plenty of ice) in salted or sugared margarita glass.

The Rattlesnake Margarita is my favorite drink at the Texas Roadhouse. A very kind server listed the ingredients for me, and I had a great time with my DH one Saturday night trying to figure out the correct per portions to get it "just right". Can best be described as a sweet and sour raspberry margarita. These are great with fajitas!! Use a top shelf tequila if you can.

12 jalapeno peppers
1 egg
2 tablespoons milk
1 tablespoon flour
1 dash salt
1 dash pepper
1 1/2 cups breadcrumbs
vegetable oil, enough for frying
1 cup shredded monterey jack cheese
12 ounces softened cream cheese
1 tablespoon bacon bits

Steps:

  • Wash jalapeno and sliced them lengthwise.
  • Remove the seeds from each half.
  • In a small bowl, mix together the Monterey Jack cheese, cream cheese, and the bacon bits.
  • Fill each jalapeno half with about four or five teaspoons of the Monterey Jack cheese and cream cheese mixture.
  • Mix flour, egg, milk, salt, and pepper to taste in a deep plate (for example, a pie plate).
  • Place breadcrumbs in another deep plate.
  • Roll each jalapeno half in egg mixture to coat.
  • Roll the coated jalapeno in breadcrumbs until covered.
  • Place the Rattlesnake Bites in the freezer for at least 30 minutes. This will firm up the filling, making it easier to fry the bites.
  • Deep fry in hot oil until golden brown.
