REALLY SIMPLE RICE
This is a very simple but tasty rice recipe. Makes a great side dish and leftovers are almost as good the next day.

- Heat olive oil in a non-stick saucepan over medium-high heat nearly to smoking. Cook and stir rice in the hot oil quickly to toast the rice, 2 to 3 minutes. Stir the onion into the rice; cook and stir 1 minute more. Pour chicken broth over the rice mixture, season with garlic salt, and bring to a boil; reduce heat to low, place a cover on the saucepan, and cook until the broth is absorbed and the rice is tender, about 20 minutes. Remove from heat and allow to rest 5 minutes before lifting the lid.

Note: 1 C uncooked rice = 3 C cooked. It's best to use rice that has been cooked the day before and stored in the refrigerator. Freshly cooked rice is too wet and will result in a soggy mess. I affectionately call this "Rule of 3 Rice" because of all the threes...

Steps:
- Whip eggs until they are frothy. Scramble, then set aside.
- Steam carrots until slightly soft (about 5 minutes). If using frozen peas & corn, run under hot water to thaw.
- Break up any clumps in the rice. Over medium-high heat, heat oil in a large pan or wok. Add rice and stir for about 1 minute, until heated through. Reduce heat to medium.
- Add soy sauce, garlic, salt & pepper. Stir-fry for 1 minute.
- Add onions, peas, corn, carrots and eggs. Stir-fry for 1 minute, until heated through.

- Use a large pot. This will help prevent the rice from sticking to the bottom and burning.
- Rinse the rice before cooking. This will remove any excess starch and help the rice cook evenly.
- Use the right amount of water. The general rule is to use 1 cup of water for every 1/2 cup of rice.
- Bring the water to a boil before adding the rice. This will help the rice cook more evenly.
- Reduce the heat to low once the water has boiled. This will help the rice cook through without burning.
- Do not stir the rice while it is cooking. This will break up the grains and make the rice mushy.
- Cook the rice for the recommended amount of time. This will vary depending on the type of rice you are using.
- Let the rice rest for 5 minutes before serving. This will allow the rice to absorb any remaining moisture and fluff up.
