A sweet but spicy BBQ Sauce. Just thick enough to slab on any meat over the grill or in the oven. The whole family enjoyed the stickiness and flavor. Brush sauce onto meat of your choice. Sweet, but a touch of hotness, too. I found this to be very enjoyable on ribs. Was able to do a 8-rib rack, but it can do another one; I just like it thick. This would be enough for 12 chicken quarters. Very easy.

Spicy and a tang of vinegar. Awesome beans, but a bit vinegary. To make it suit my own personal tastes, I added 2 (16 oz.) cans of diced tomatoes and 2 more (16 oz.) cans of beans. My husband insisted I add 1/2 pound of browned ground pork sausage. I also add a teaspoon of baking soda because I've been told it lets the "air" out of beans. Used kidney beans they took several hours of simmering to get tender enough--next time I will try the pink beans. Those of you with a tender palette, beware of the cayenne pepper and use accordingly! What I ended up with was an awesome pot of BBQ Beans.

5 slices bacon, diced
1 cup yellow onion, diced
3/4 cup celery, diced
2 cups barbecue sauce (memphis-style recipe here on Zaar 33814)
1/2 cup amber ale
1/4 cup Worcestershire sauce
1 1/2 cups brown sugar
1 1/2 tablespoons dry rub seasonings (BBQ Red Beans)
1 1/2 tablespoons cajun seasoning
1 teaspoon garlic powder
1 teaspoon liquid smoke
1/2 cup tomato paste
6 (12 ounce) cans pink beans or 6 (12 ounce) cans kidney beans

Steps:

  • In 6- to 10-quart pan over medium heat, melt butter.
  • Sauté bacon, onion and celery until vegetables often, about 15 minutes.
  • To pan add Barbecue Sauce, ale, Worcestershire, brown sugar, dry rub seasoning (Recipe #33812), Cajun seasoning, garlic powder, and liquid smoke.
  • Bring to a boil.
  • Reduce heat to simmer and add tomato paste.

1 lb. red kidney beans
2 qt. water
1 large onion (chopped)
1/4 cup vegetable oil
1 lb. smoked ham (cubed)
1 lb. smoked sausages (in 1/2-inch slices)
1 cup water
1 tbsp. chopped garlic
1 bay leaf
1 tbsp. black pepper
2 tbsp. chopped parsley
1 tsp. whole thyme leaves
2 level tbsp. salt

Steps:

  • Pick through beans, removing all bad beans or any other particles. Wash beans well. Place beans in a 5-quart pot. Add the 2 quarts of water. Add onions; bring to a boil. Lower heat and let beans boil slowly for 1 hour. When beans are soft, stir well, mashing some against the side of the pot.
  • Heat oil in frying pan; add ham and sausage. Sauté in oil for 5 mintues. Then add the sausage, ham, and oil to beans. Deglaze pan with the cup of water, then pour into beans. Add all other ingredients. Let simmer for 30 minutes. Beans should be nice and creamy. Serve over rice.
