Good ole red beans and rice with lots of smoked sausage. I put lots of garlic in it which makes it tasty. I take it to my bingo crowd and they love it! Normally I don't measure, so I decided to write it down while I was making it. This is medium on the heat but make it hot as you like!

3 pounds smoked sausage, cut into bite-sized pieces
8 (15 ounce) cans dark red kidney beans, drained and rinsed
1 large onion, chopped
6 tablespoons minced garlic
2 cups uncooked white rice
4 cups water
2 tablespoons Cajun seasoning
4 dashes hot pepper sauce, or to taste
1 teaspoon salt, or to taste
1 bay leaf

Steps:

  • In a 6 quart or larger slow cooker, combine the smoked sausage, kidney beans, onion, garlic, rice and water. Season with Cajun seasoning, hot pepper sauce, salt and bay leaf. Cover and set on High. Once it gets heated through, stir to distribute everything evenly. Cover and cook on Low for 6 hours or on High for 4 hours.

1 lb dried red beans
1-1/2 lb smoked sausage cut into chunks or slices (your favorite kind)
1 large ham hock or ham bone
1 large chopped onion
2 clove garlic, minced
1 tsp dried thyme
1 tsp freshly ground black pepper
1/2 tsp ground sage
1/4 tsp cayenne pepper, flakes or powder (more or less to taste)
salt to taste
freshly cooked white rice

Steps:

  • 1. Soak beans overnight in cold water. Drain and put the beans in a large pot or Dutch oven. Add fresh water to cover, along with the sausage and ham, onion, garlic, thyme, pepper, sage and cayenne. Bring to boil over medium high heat.
  • 2. Reduce heat to medium low, cover and simmer until beans are tender, adding more water if necessary to keep them from drying out. This will take 2 to 3 hours. Add salt to taste. Discard ham bones.
  • 3. Remove about 1/4 cup of beans from mixture and mash; return to Dutch oven and stir. Simmer 15 more minutes. Serve over hot rice.

1 lb dried red kidney beans, soaked in water overnight
1 1/2 lbs smoked sausage
1 tablespoon canola oil
8 cups water
1 large onion, chopped
1/4 teaspoon salt (I omit)
1/8 teaspoon pepper
1/4 teaspoon chili powder
1/8 teaspoon cumin powder

Steps:

  • In large stew pot, soften onions in oil for 1 minute.
  • Add water.
  • Wash beans and pour into stew pot.
  • Cover and cook on low for 1 hour and 30 minutes.
  • Remove 1/4 cup of beans and mash, then return to pot and stir.
  • Continue to cook until gravy becomes thickened.
  • About 10 to 20 minutes.
  • Cut sausage into pieces about 1 inch long and add to the beans.
  • Add salt, pepper, chili powder, and cumin powder.
  • Continue to cook for 15 to 20 minutes.
  • Serve over rice.

Tips:

  • Use high-quality andouille sausage for the best flavor.
  • Soak the beans overnight before cooking to reduce the cooking time.
  • Add a bay leaf and some thyme to the pot while the beans are cooking for extra flavor.
