Time 35m

Number Of Ingredients 6

1 lb baby red potatoes, halved
1/2 lb fresh green beans, trimmed
2 tsp olive oil, extra virgin
1 clove minced garlic
1-2 Tbsp dried parsley flakes, crushed
salt and pepper, to taste

Steps:

  • 1. Bring a large pot of salted water to boil. Add the potatoes; boil for an additional 10 minutes. DO NOT DRAIN.
  • 2. Add green beans to potatoes in water and cook 5 minutes more or until tender crisp. Drain well.
  • 3. In a skillet, heat olive oil over medium high heat. Add the garlic; cook and stir fry for 30 seconds. Add the potatoes and beans; salt & pepper to taste. Stir well. Add crushed parsley; stir well. Cook an additional 2 minutes or until heated through. Serve.

Tips:

  • Choose the right potatoes: Red potatoes are the best choice for this recipe because they hold their shape well and have a slightly waxy texture that makes them ideal for sautéing.
  • Cut the potatoes evenly: This will ensure that they cook evenly and at the same time.
  • Don't overcrowd the pan: If you overcrowd the pan, the potatoes will not cook evenly and will become mushy.
  • Cook the potatoes until they are tender: You can check this by piercing them with a fork. If the fork goes through easily, the potatoes are done.
  • Add the green beans towards the end of cooking: This will prevent them from becoming overcooked and mushy.
  • Season the dish to taste: You can use salt, pepper, garlic powder, or any other seasonings that you like.
  • Garnish with fresh herbs: This will add a pop of color and flavor to the dish.

Conclusion:

This red potato and green bean sauté is a quick and easy recipe that is perfect for a weeknight meal. It is healthy, delicious, and sure to please everyone at the table. So next time you are looking for a simple and flavorful dish, give this recipe a try. You won't be disappointed!
