Steps:
- -Preheat oven to 425.
- -Cut up potatoes (and celery and carrots, if using) and put in an 8x8 glass baking dish.
- -Chop onion and shallot in food processor and mix with potatoes/veggies.
- -Mix garlic in with potatoes/veggies, onions and shallots.
- -Pour on enough olive oil to coat the potato/veggie mixture (I usually put sandwich baggies over my hands and mix it all with my hands. You want to completely cover the potatoes with the olive oil so that the seasonings will stick).
- -Sprinkle seasonings over potato/veggie mixture (I used the ones listed above, but use whatever kinds you like). Do not add parmesan cheese yet.
- -Pour 3 tbsp of butter over everything if you want to add a buttery flavor, or skip this step if you prefer the olive oil only.
- -Bake for 55 mins, stirring once halfway through cooking.
- -Remove from oven and add shredded parmesan, then bake for another 5 mins or until cheese is melted.

Tips:
- Selecting the Right Potatoes: Choose small, firm red potatoes that are roughly the same size to ensure even cooking.
- Proper Cleaning: Scrub the potatoes thoroughly under running water to remove any dirt or debris. Do not peel them, as the skin adds flavor and nutrients to the dish.
- Uniform Slicing: Cut the potatoes into quarters or wedges for a more visually appealing presentation. Thinner slices will cook faster, while thicker ones will require a longer cooking time.
- Seasoning and Marinade Options: Experiment with various seasonings and marinades to enhance the flavor of the potatoes. Dried herbs like rosemary, thyme, or paprika add a savory touch. You can also toss the potatoes in olive oil, crushed garlic, and lemon zest for a Mediterranean twist.
- Achieving Perfect Crispiness: Preheat your oven to the specified temperature to ensure the potatoes cook evenly and develop a crispy exterior. Spread the potato wedges in a single layer on a baking sheet to prevent overcrowding and promote even browning.
- Roasting Time and Temperature: Roast the potatoes for the recommended duration at the specified temperature, turning them occasionally to ensure they cook evenly on all sides. Keep a close eye on them to prevent burning.
Conclusion:
This collection of red potatoes with garlic and olive oil recipes offers a versatile and flavorful side dish that complements a wide range of main courses.
