Tips:

  • Choose the right chicken: For the best flavor, use bone-in, skin-on chicken thighs or drumsticks. These cuts are more flavorful and will hold up better in the stew.
  • Brown the chicken: Browning the chicken before adding it to the stew will help to develop flavor and color. Do this in a large pot or Dutch oven over medium-high heat.
  • Use a good quality red wine: The wine you use in the stew will have a big impact on the flavor, so choose one that you enjoy drinking. A dry red wine, such as a Cabernet Sauvignon or Pinot Noir, is a good option.
  • Add vegetables to the stew: Vegetables add flavor, texture, and nutrients to the stew. Good choices include carrots, celery, onions, potatoes, and mushrooms.
  • Simmer the stew for at least 1 hour: This will allow the flavors to meld and the chicken to become tender. Longer simmering will result in a more flavorful stew.
  • Serve the stew with crusty bread or rice: This will help to soak up the delicious sauce.
