1 pint cherry tomatoes, optional

1 lime, zested and juiced
2 tablespoons soy sauce
1 (10.5 ounce) can chicken broth
4 boneless, skinless chicken breast halves
2 tablespoons olive oil
1 teaspoon anchovy paste
½ teaspoon white sugar
½ teaspoon salt
freshly ground black pepper to taste
2 cloves garlic, minced
3 tablespoons chopped fresh cilantro
2 shallots, chopped

Steps:

  • Place the lime peel, soy sauce, and chicken broth in a skillet over medium heat. Place the chicken breasts in the skillet, and bring to a boil. Cover, and simmer until the chicken is fully cooked. Remove from heat, and allow to cool. Shred chicken, and set aside.
  • In a separate bowl, whisk together lime juice, olive oil, anchovy paste, sugar, salt, and pepper. Stir in garlic, cilantro, shallots, and chicken. Mix well.

2 pounds skinless, boneless chicken breasts, or more to taste, cut into bite-sized pieces
1 teaspoon garlic powder, plus more to taste
kosher salt and ground black pepper to taste
1 pinch poultry seasoning, or more to taste
1 cup chopped celery
1 cup red onion, chopped
¼ cup slivered almonds, or to taste
3 tablespoons mayonnaise, or to taste
2 squeezes lime juice, or to taste
1 teaspoon ground cumin
1 teaspoon chili powder
1 tablespoon chopped fresh cilantro, or more to taste

Steps:

  • Heat oil in a large skillet over medium heat and add chicken. Season with garlic powder, salt, pepper, and poultry seasoning. Cook until chicken is no longer pink inside and juices run clear, 10 to 12 minutes. Transfer cooked chicken to a large mixing bowl.

This is one of my favorite salads. I add more cilantro than is called for because I love it so much. Make a little extra dressing and keep it on hand in the fridge. Can be used for marinates, dips and of course salad dressing.

1/3 cup(s) olive or vegetable oil
2 tablespoon(s) lime juice
2 tablespoon(s) minced fresh cilantro
1/4 teaspoon(s) ground cumin
1/4 teaspoon(s) salt
1/8 teaspoon(s) crushed red pepper flakes
2 cup(s) torn leaf lettuce (romaine, spring mix or spinich work great)
1 cup(s) tomatoes cut in wedges (cherry or roma tomatoes work well)
1 cup(s) cubed chicken (about 1 chicken breast)

Steps:

  • In a jar with a tight-fitting lid (a canning jar works best), combine the oil, lime juice, cilantro, cumin, salt and red pepper flakes. Do a dance and shake the jar well.
  • In a bowl, combine the lettuce, chicken and tomatoes. Drizzle with dressing and toss to coat. You can add extra cilantro if you wish on top. Refrigerate any excess dressing. I have also used some of this to marinate the chicken in a separate bowl or container prior to cooking. Turned out very well.
