RE-FRIED BLACK BEANS

Re-fried Black Beans image

Super Easy Refried Beans. Homemade refried beans are a lot easier to make than you think. All you need is 4 ingredients. Ready in under 15 minutes!

Provided by Kelley Simmons

Categories     Side Dish

Time 25m

Number Of Ingredients 10

15.5 ounce can black beans, drained and rinsed
2 tbsp extra virgin olive oil
1/2 cup onions, diced
2 cloves garlic, minced
1/4 tsp cumin
1/4 tsp dried oregano
1/4 tsp salt
1/4 tsp pepper
1/2 tsp chili powder
3/4 cup chicken broth

Steps:

  • Add olive oil to a medium saucepan and heat over medium-high heat. Add in onions and saute until tender and golden brown 3-4 minutes. Add in garlic and saute for an additional minute.
  • Stir in the spices: cumin, oregano, salt, pepper and chili powder. Allow them to cook for one minute. Keep an eye on them and continuously stir so they do not burn.
  • Add in beans and chicken broth and turn the heat down to low. Simmer until the mixture has thickened a bit, 5-10 minutes. (The mixture will still look a bit watery but will thicken when we mash the beans)
  • Mash the beans with the back of your spatula or with a potato masher. Make sure to leave some of the beans whole to keep a chunky texture. Serve the beans as is or top with cilantro, raw onions, sour cream, or queso fresco.

Yield About 8 cups

Number Of Ingredients 20

1 pound dried black beans, rinsed thoroughly
1 tablespoon extra virgin olive oil
1/2 large white onion, chopped
1 green bell pepper, chopped
4 to 5 garlic cloves, crushed
1 bay leaf
1/4 cup extra virgin olive oil
1/2 large white onion, finely chopped
1 green bell pepper, finely chopped
3 garlic cloves, finely chopped

  • In a large pot, soak beans overnight in 10 cups of water.

FRIJOLES REFRITOS (REFRIED BEANS)

Frijoles Refritos (Refried Beans) image

When I have left over pinto beans, this is our favorite recipe. Once you taste it, you'll never settle for canned refried beans again. Queso Blanco is not a melting cheese but it becomes soft and creamy when heated. In this recipe you get yummy savory beans with creamy little bits of cheese. Delicious!

Provided by Sandy in Oklahoma

Categories     Beans

Time 25m

Yield 4 cups

Number Of Ingredients 7

4 cups cooked pinto beans, undrained (canned pinto beans can be used)
1/4 cup chopped onion
1 small finely chopped jalapeno, deseeded
1/4 cup lard (cooking oil can be used also) or 1/4 cup butter (cooking oil can be used also)
salt, to taste
pepper, to taste
8 ounces queso blanco, grated

Steps:

  • Place beans and juice in blender or food processor. Blend just enough to break into small pieces.
  • Cook and stir onion and jalapeno in hot lard or butter until tender. Stir in beans 1 cup at a time until they are all incorporated.
  • Continue cooking and stirring constantly until mixture thickens and you can see the bottom of the pan as you stir.
  • Add cheese and stir until well-blended. Add salt and pepper to taste.
  • Note: My home cooked pinto beans tend to be spicy. If you are using mild beans or canned beans, you might want to add a couple cloves of minced garlic and 1/2-1 teaspoon cumin.

Tips:

  • For the best flavor, use day-old black beans. Freshly cooked beans will be too soft and mushy.
  • If you don't have any day-old beans, you can cook them quickly in a pressure cooker. Just add the beans, water, and a little salt to the pressure cooker and cook on high pressure for 15 minutes.
  • Once the beans are cooked, drain them and rinse them well.
  • Mash the beans with a fork or potato masher until they are mostly smooth, but still have a little texture.
  • Heat the oil in a large skillet over medium heat. Add the onion and cook until it is softened.
  • Add the garlic, cumin, and chili powder to the skillet and cook for 1 minute, or until the spices are fragrant.
  • Add the mashed beans to the skillet and stir to combine.
  • Season with salt and pepper to taste.
  • Reduce the heat to low and simmer for 15 minutes, or until the beans are heated through.
  • Serve immediately with your favorite toppings. Some popular options include cheese, sour cream, avocado, and salsa.

Conclusion:

Refried black beans are a delicious and versatile dish that can be enjoyed as a dip, side dish, or main course. They are also a great source of protein and fiber. With just a few simple ingredients and steps, you can easily make refried black beans at home. So next time you are looking for a quick and easy meal, give this recipe a try.
