CLASSIC SOUTHERN FRIED CHICKEN

Classic Southern Fried Chicken image

This is a basic Southern fried chicken recipe and the only one you will ever need. Chicken pieces are fried to perfection with a seasoned flour coating.

Provided by Diana Rattray

Categories     Entree     Dinner

Time 1h15m

Yield 4

Number Of Ingredients 7

1 1/2 cups milk
2 large eggs
2 1/2 cups all-purpose flour
2 tablespoons salt (plus additional for sprinkling)
2 teaspoons black pepper
4 pounds chicken (bone-in, skin-on pieces)
3 cups vegetable oil (or amount needed for frying)

Steps:

  • Gather the ingredients. Preheat the oven to 200 F and place a rack in a large baking pan.
  • In a medium bowl, combine the milk and eggs. Whisk to blend well.
  • In a large heavy-duty resealable plastic food storage bag, combine the flour, 2 tablespoons salt, and pepper. Seal and shake to combine.
  • Dip the chicken pieces in the milk and egg mixture and let excess drip off into the bowl. Set already dipped pieces aside on a plate until you have three or four.
  • Add the dipped chicken pieces to the bag of seasoned flour.
  • Seal the bag and shake well to coat the chicken pieces thoroughly.
  • Remove to a plate and repeat with the remaining chicken pieces.
  • Heat the oil in a deep, heavy skillet to 350 F. While it's heating up, set aside a large serving plate lined with paper towels.
  • Fry the chicken, a few pieces at a time, for about 10 minutes on each side, or until golden brown and thoroughly cooked. Be careful not to put too many chicken pieces in at once-even if they can comfortably fit-since this will dramatically drop the temperature of the oil, affecting the crispness of the final product. Note that chicken breasts will take a little less time than dark meat pieces.
  • With a slotted spoon, move the done chicken pieces onto the paper towel-lined platter to drain. Sprinkle immediately with salt.
  • Transfer the drained and seasoned chicken to the prepared pan with a rack. Keep warm in the preheated oven while frying subsequent batches. Depending on the size of your pan, this recipe will require about 3 to 4 batches.

CRISPY FRIED CHICKEN

Crispy Fried Chicken image

I experimented for many years before developing this recipe. It's bits and pieces of hints I had heard over the years. I have had many compliments on this chicken. Most of this recipe is dependant on your own taste. It's more a matter of preparation and cooking method!

Categories     Meat and Poultry Recipes     Chicken     Fried Chicken Recipes

Yield 8

Number Of Ingredients 6

1 (4 pound) chicken, cut into pieces
1 cup buttermilk
2 cups all-purpose flour for coating
1 teaspoon paprika
salt and pepper to taste
2 quarts vegetable oil for frying

Steps:

  • Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
  • Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well. Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!
  • Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil. Heat until VERY hot. Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
  • Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.

CHICKEN FRIED RICE - RESTAURANT STYLE

Chicken Fried Rice - Restaurant Style image

I was working in a great little chinese restaurant in Acworth, GA for over a year. Here's the recipe. You can substitute the meat for shrimp, beef flank steak, pork loin or add all three for "House Special" fried rice. For Hawaiian Fried Rice, use good quality ham and diced pineapple!

Provided by nisguy_300

Categories     One Dish Meal

Time 1h38m

Yield 2 serving(s)

Number Of Ingredients 14

2 cups uncooked long-grain rice (Jasmine Thai)
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon white pepper
1/4 teaspoon msg
1/2 teaspoon oyster sauce
1 teaspoon soy sauce
1 egg
1/2 cup frozen peas and carrot
1/2 sweet vidalia onion, finely chopped
1/2 lb chicken breast
1 teaspoon cornstarch
1/8 teaspoon garlic powder
4 tablespoons vegetable oil

Steps:

  • Wash rice and cook with a couple pinches of salt. Then, put it on a plate and cover with saran wrap and allow to cool in fridge for at least 1 hour.
  • Slice the chicken to the size of 3 quarter dollars put together, or cut to your preference. Partially freeze the meat to make meat easier to cut small.
  • Put the chicken in a small bowl. Add the cornstarch, garlic powder, 1/2 the salt, 1/2 the sugar, 1/2 the white pepper, 1/2 the MSG and 2 teaspoons of water. Mix by hand to coat the meat. This step keeps the meat juicy while cooking in hot oil.
  • Heat 3 tablespoons oil in your wok at 80% heat. Add the chicken and cook until white. Drain off the oil and set meat aside.
  • Add the remaining tablespoon of oil to the wok. Heat to 60% heat and add the beaten egg. Allow the egg to cook before stirring it. Stirring the egg while it is setting will make the egg more fluffy, like scrambled eggs.
  • Turn the heat up to 80% and add the onion. Cook for 30 seconds and then add the cooled rice. Keep flipping or turning the rice over to heat it evenly in the pan for 1 minute.
  • Add the remaining salt, sugar, white pepper, and MSG. Continue turning the rice for another minute.
  • Add the chicken, oyster sauce, soy sauce, and peas and carrots. Continue turning and flipping for 3 minutes.

RESTAURANT-STYLE FRIED CHICKEN FINGERS (OVEN-BAKED OPTION)

Restaurant-Style Fried Chicken Fingers (Oven-Baked Option) image

Make these as spicy as desired by adjusting the cayenne peppe, you may use your own favorite seasoning for the breading mixture --- plan ahead the chicken needs to marinate for 3-4 hours, I have listed oven-baking instructions on the bottom of the recipe -- if you are making these for a small crowd I strongly suggest to double the recipe these will be gone in a flash they are so good, serve with honey mustard dipping sauce :)

BON TON STYLE FRIED CHICKEN

Bon Ton Style Fried Chicken image

From epicurious.com: Bilko's spice mix is a closely guarded secret, but Donna King, the restaurants cook, shared with us its fundamental ingredients as well as the basic technique - a long marination, at least 24 hours. This results in some of the juiciest chicken we've ever eaten. The chicken must also rest five or ten minutes after being dredged in the seasoned flour to, as King told us, "get doughy." The Bon Ton recipe calls for Ac'cent (monosodium glutamate) in both the marinade and the dredging mixture. We tested it with and without, and the chicken mainly tasted saltier with the Ac'cent, which some people preferred. The formula for this amazing dish dates back to the 1950s and a restaurant in Henderson known as The Colonel's Lair. It was a favorite haunt of local high school students and it was run by a man named Bill Koch, whom the kids called Bilko because that's the way he pronounced it. All who remember The Colonel's Lair agree that Bilko made the best fried chicken anywhere. In the state where Harland Sanders began a fried-chicken empire based on the secret recipe he used in the kitchen of his service station/café, such judgments are not made lightly. Bilko is gone, but Bon Ton proprietor George Markham and his former cook, Donna King, managed to get the recipe for the amazing chicken; and now it is served every day

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 16

1 quart water
2 tablespoons salt
2 teaspoons cayenne
2 teaspoons garlic powder
1 1/2 teaspoons white pepper
1 tablespoon soy sauce
2 teaspoons Worcestershire sauce
4 chicken breast halves
4 chicken thighs, and
4 chicken drumsticks (all with skin and bones, 4 to 4 1/2 lb total)
3 cups all-purpose flour
1 tablespoon salt
1 teaspoon garlic powder
1 teaspoon cayenne
1 teaspoon white pepper
6 -12 cups vegetable oil (for frying chicken)

Steps:

  • Whisk together all marinade ingredients in a large bowl.
  • Add chicken, making sure it is covered with marinade. Chill, covered, stirring twice, about 24 hours.
  • Meanwhile, whisk together all dredging ingredients in a large bowl. Drain chicken, discarding marinade. Dredge each piece of chicken in seasoned flour and put on a large baking sheet. Let stand about 10 minutes.
  • Heat 2 inches oil in a wide 8- to 9 1/2-quart pot over moderately high heat until a deep-fat thermometer registers 365 to 375°F (Our pot was 12 inches wide and 5 inches deep; if you don't have that wide a pot, you can fry the chicken in two batches.).
  • Fry chicken, turning a few times, 20 to 25 minutes or until golden brown, then drain on a rack.

Tips:

  • Use buttermilk to marinate the chicken: Buttermilk helps to tenderize the chicken and gives it a flavorful crust.
  • Season the chicken generously: Use a combination of salt, pepper, garlic powder, onion powder, and paprika to flavor the chicken.
  • Double-coat the chicken in flour: This helps to create a crispy crust.
  • Fry the chicken in hot oil: The oil should be at least 350 degrees Fahrenheit.
  • Don't overcrowd the pan: This will cause the chicken to steam instead of fry.
  • Cook the chicken until it is golden brown and crispy: This should take about 10-12 minutes per side.
  • Let the chicken rest before serving: This allows the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Restaurant-style fried chicken is a delicious and versatile dish that can be enjoyed by people of all ages. By following the tips above, you can easily make this classic dish at home. Serve it with your favorite sides, such as mashed potatoes, coleslaw, or French fries, for a complete meal.
