PERFECT SMASHED POTATOES

Perfect Smashed Potatoes image

We've seen plenty of potato trends over the past few years: Retro hasselback potatoes made a comeback, buttery "melting" potatoes took over Pinterest soon after, and now smashed potatoes are the spuds of the moment. The idea is to simmer small potatoes until tender, then toss them with olive oil, flatten them and crisp them in the oven. It's simple - and insanely delicious. There are more than 35,000 #smashedpotatoes photos on Instagram, and many Food Network stars are obsessed, too. Here's how to make them like a pro.

Steps:

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. Broil, turning, until crisp and golden, 15 to 20 minutes.

Time 1h25m

Yield 4

Number Of Ingredients 11

1 ½ pounds small yellow-fleshed potatoes
¼ cup olive oil
1 teaspoon butter at room temperature
2 tablespoons balsamic vinegar
3 cloves garlic, minced
1 teaspoon dried rosemary
½ teaspoon dried sage
½ teaspoon ground thyme
½ teaspoon dried savory
½ teaspoon sea salt
½ teaspoon ground black pepper

Steps:

  • Place potatoes in a saucepan, fill with water to cover the potatoes, and bring to a boil. Reduce heat to a simmer, and cook the potatoes until tender but not mushy, about 20 minutes. Drain and allow potatoes to cool.
  • While potatoes are cooking, combine olive oil, butter, balsamic vinegar, garlic, rosemary, sage, thyme, savory, sea salt and pepper in a bowl. Stir with a fork to combine well.
  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
  • Place the potatoes in a single layer on the prepared baking sheet, and lightly press down on the potatoes to partially crush them. Spoon the oil-herb mixture over each potato.
  • Bake in the preheated oven until the edges of the potatoes are beginning to crisp, about 25 minutes. Cool for about 5 minutes before serving.

Categories     Mashed Potatoes

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 7

1 1/2 lbs red potatoes or 8 small red potatoes, quartered, skin left on
1 1/2 teaspoons kosher salt, divided
1/4 teaspoon fresh ground black pepper
1 teaspoon garlic powder
1/2 cup sour cream
1/2 cup grated parmesan cheese
1/4 cup unsalted butter, cut into pieces

Steps:

  • Place potatoes in a large pot or dutch oven. Add enough water to cover the potatoes. Stir in 1 teaspoon of the kosher salt. Bring to a boil, then reduce heat, cover and simmer about 20 to 25 minutes.
  • Meanwhile, place the remaining 1/2 teaspoon kosher salt, pepper, garlic powder, sour cream, Parmesan cheese and butter in the bowl of an electric mixer.
  • When potatoes pierce easily with a paring knife, remove from heat and drain. Add potatoes to the bowl with the other ingredients and mix on medium speed until mostly smooth (there may be some lumps, but we usually don't mind that). Serve.

LONGHORN STEAKHOUSE MASHED POTATOES

Skip going out and make Longhorn's mashed potatoes at home!

Provided by Katie Clark

Categories     Copycat

Time 45m

Number Of Ingredients 8

3 lbs russet potatoes
1 cup heavy cream
1/3 cup sour cream
1/2 cup softened butter
1 Tablespoon minced garlic
Pepper (to taste)
Salt (to taste)
Extra Melted butter

Steps:

  • Peel and cook potatoes until soft with preferred method. I personally used my Instant Pot using this Instant Pot Mashed potato recipe (I just stopped after I drained the water, as this recipe is different). I peel the potatoes and quarter them, cover with water (or you can just do two cups) and cook on manual high for 7 minutes.
  • If you cook in a pot, bring the water to a boil, add potatoes, and then bring down to a simmer. Cook for about 20-25 minutes, or until a fork goes through easily.
  • Drain excess water. Set aside one potato in a bowl.
  • Mix together the softened butter with the minced garlic.
  • Add the heavy cream, butter, and sour cream to the potatoes and mix until pureed with a hand mixer. You may have to add more heavy cream to get them REALLY smooth.
  • With the potato you set aside, mash coarsely.

Tips:

  • Choosing the Right Potatoes: Select russet potatoes or Yukon Gold potatoes for the perfect balance of crispiness and fluffiness.
  • Boiling the Potatoes: Ensure the potatoes are fully submerged in boiling water to achieve even cooking.
  • Draining the Potatoes Thoroughly: Drain the potatoes well to remove excess moisture, preventing sogginess.
  • Smashing the Potatoes: Use a potato masher or fork to gently smash the potatoes, leaving some chunks for texture.
  • Seasoning Generously: Don't be shy with the seasonings! Garlic powder, onion powder, paprika, salt, and pepper are essential.
  • Adding Butter and Milk: Incorporate butter and milk for a creamy, flavorful interior and a crispy, golden-brown exterior.
  • Cooking in a Hot Skillet: Use a well-seasoned cast iron skillet or a non-stick pan over medium-high heat for the best results.
  • Flipping Carefully: Flip the potatoes gently to avoid breaking them apart.

Conclusion:

Restaurant-style smashed potatoes elevate the humble potato to a culinary delight. By following these tips and using the provided recipe, you can easily recreate this popular side dish at home. Remember to boil the potatoes until tender, smash them gently, season them generously, and cook them in a hot skillet for that irresistible crispy exterior. Serve them as a side dish to steak, chicken, fish, or your favorite protein for a complete and satisfying meal. Enjoy these smashed potatoes as a crowd-pleasing addition to your next gathering or as a comforting weeknight dinner option.
