SKILLET CHICKEN WITH RHUBARB

Skillet Chicken With Rhubarb image

In this savory skillet dinner, rhubarb, onions and garlic are simmered with white wine and butter into a rich sauce for browned chicken parts. I call for a whole, cut-up chicken here, so you'll have the different parts to choose from at the table. (Just be sure to watch the breasts carefully; they might finish cooking before the dark meat.) But you can use your favorite chicken part instead. Thighs and drumsticks work particularly well. This dish goes nicely with polenta, which also helps brighten the rather drab color of the brightly flavored sauce.

Time 1h

Yield 4 servings

Number Of Ingredients 11

1 (5 1/2-pound) whole chicken, cut into eight pieces
1 tablespoon plus 1/2 teaspoon kosher salt, more as needed
1 teaspoon black pepper, more as needed
5 sprigs thyme, preferably lemon thyme
2 tablespoons extra-virgin olive oil
1 bunch spring onions or scallions, white and light green stalks thinly sliced (slice and reserve greens for garnish)
2 stalks green garlic, thinly sliced, or 2 garlic cloves, minced
1/2 cup dry white wine
3/4 pound fresh rhubarb, cut into 1/2-inch dice (3 cups)
1 tablespoon honey, or to taste
2 tablespoons unsalted butter, cut into pieces

Steps:

  • Pat chicken dry and season with 1 tablespoon salt and 1 teaspoon pepper. Place in a bowl with the thyme sprigs and cover with plastic wrap; refrigerate at least 1 hour or overnight.
  • Heat oil in a large skillet over medium-high heat. Remove thyme from bowl with chicken, reserving thyme. Add chicken pieces to skillet and sear, turning occasionally, until golden brown all over, about 10 minutes. Transfer pieces to a platter.
  • Reduce heat to medium. Stir in onion (white and light green parts) and cook until softened, about 5 minutes. Add garlic and reserved thyme; cook 1 minute more. Stir in wine and bring to a simmer, scraping up any browned bits in the bottom of pan. Add rhubarb, honey, 1/2 teaspoon salt and a few grinds of pepper.
  • Return chicken pieces to pot in a single layer. Cover and reduce heat to medium-low. Simmer until chicken is cooked through, 15 to 20 minutes for breasts and 20 to 25 minutes for legs and thighs, transferring chicken pieces to a platter as they finish cooking.
  • Whisk butter into rhubarb sauce. Taste and adjust seasoning if necessary. Spoon sauce over chicken and garnish with sliced onion greens.

CURRY CHICKEN

Curry Chicken image

Provided by Kwame Onwuachi

Categories     main-dish

Time P1DT1h45m

Yield 6 to 8 servings

Number Of Ingredients 21

1 bunch fresh cilantro, roughly chopped (leaves and some stems)
1 stalk celery, chopped
1 Scotch bonnet or habanero chile, stem removed (see Cook's Note)
1 large yellow onion, chopped
1 cup vegetable oil
2 tablespoons peeled and minced fresh ginger
2 tablespoons thyme (leaves and young stems)
10 cloves garlic
1 yellow onion, thinly sliced
1 Scotch bonnet or habanero chile, sliced
3 tablespoons curry powder
3 pounds skin-on chicken legs and thighs
1/4 cup vegetable oil
1 quart chicken broth or stock
1 pound Yukon gold potatoes, peeled and cubed
Juice of 1 to 2 limes
Kosher salt
2 green onions, green parts only, sliced on a bias
4 tablespoons unsalted butter
1 cup jasmine rice
Kosher salt

Steps:

  • For the green seasoning: Put the cilantro, celery, chile, onions, oil, ginger, thyme leaves and garlic cloves in a blender. Process until a paste forms.
  • For the marinade and chicken: Add the onion, chile, curry powder and chicken to a large bowl. Add the green seasoning and toss to combine. Cover the bowl or transfer to a resealable bag and refrigerate for at least 24 hours.
  • Preheat the oven to 350 degrees F.
  • Heat the oil in a large Dutch oven over medium-high heat until smoking. Working in batches, remove the chicken from the marinade, scraping off the onions. Sear the chicken until it's brown on all sides, about 5 minutes per side. Keep the rest of the marinade. Remove the chicken to a plate and set aside.
  • Add the remaining marinade and a pinch of salt to the Dutch oven and cook, stirring occasionally and scraping up the brown bits that cling to the bottom, until the onions are softened and the brown bits on the bottom have been released, about 5 minutes. Add the chicken broth and the seared chicken, along with any juices, back to the pot. Cook for 35 minutes, stirring occasionally, then add the potatoes and cook until the chicken is tender and cooked through, the potatoes are tender and the liquid is reduced by half, 10 minutes more.
  • For the rice: While the chicken is cooking, melt the butter in a medium saucepan over medium-high heat. Add the rice, stir to coat, and toast until translucent about 2 minutes. Add 1 1/2 cups water and a pinch of salt. Bring to a boil, then cover and place the saucepan in the oven, until the water is fully absorbed, about 18 minutes. Remove the lid and fluff the rice with a fork, then cover until ready to serve.
  • Remove the Dutch oven from heat and add the lime juice and salt to taste. Serve the curry over the rice and garnish with the green onions.

Tips:

  • Choose the right rhubarb: Use fresh, firm rhubarb stalks with minimal blemishes. Look for stalks that are bright red in color.
  • Prepare the rhubarb properly: Trim the ends of the rhubarb stalks and remove any leaves. Cut the stalks into 1-inch pieces.
  • Don't overcook the rhubarb: Rhubarb cooks quickly, so be careful not to overcook it. Overcooked rhubarb will become mushy and lose its bright color.
  • Use a variety of spices: Curry powder, garam masala, and turmeric are all common spices used in Indian cuisine. Feel free to experiment with different spices to create your own unique flavor profile.
  • Serve with rice or naan: Rhubarb curry chicken is traditionally served with rice or naan. You can also serve it with quinoa, couscous, or your favorite side dish.

Conclusion:

Rhubarb curry chicken is a delicious and unique dish that is sure to impress your friends and family. It is a great way to use up fresh rhubarb and is a perfect meal for a weeknight dinner. With its vibrant flavors and colors, rhubarb curry chicken is a dish that you will want to make again and again.
