Rhubarb Muffins (Low Fat) image

I was looking for a delicious way to use up all my Rhubarb. Being very health concious, I altered a combination of recipes and came up with this. I hope you enjoy it as much as I do. Please pay special attention to the cooking instructions regarding the length of time. Due to the moisture in the muffin you may have to cook longer

Tips:

  • Choose fresh rhubarb. Look for stalks that are firm and crisp, with no signs of wilting or bruising. The rhubarb should also be a deep red color, indicating that it is ripe and flavorful.
  • Prepare the rhubarb properly. Wash the rhubarb stalks thoroughly and remove any leaves or blemishes. Cut the stalks into small pieces, about 1/2 inch thick.
  • Use a muffin mix that you like. There are many different muffin mixes available, so choose one that you think your family will enjoy. You can also use a homemade muffin mix, if you prefer.
  • Add some extra flavor. If you want to add some extra flavor to your muffins, you can add some spices, such as cinnamon, nutmeg, or ginger. You can also add some chopped nuts, such as walnuts or pecans.
  • Bake the muffins at the correct temperature. The muffins should be baked at 350 degrees Fahrenheit for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
