AGED RIB EYE WITH ONION PURéE

Aged Rib Eye with Onion Purée image

Provided by Magnus Nilsson

Categories     Beef     Herb     Onion     Father's Day     Dinner     Steak     Bon Appétit

Yield Makes 4 servings

Number Of Ingredients 9

6 tablespoons unsalted butter, divided
2 medium Vidalia or Maui onions (about 1 1/4 pounds total), very thinly sliced on a mandoline (about 3 packed cups)
1/4 cup low-salt chicken stock
1 tablespoon buttermilk
Kosher salt
1 tablespoon vegetable oil
1 28-ounces dry-aged rib-eye steak (about 2" thick), standing at room temperature for 1 hour
Coarse sea salt
Assorted soft herb sprigs (such as tarragon, flat-leaf parsley, and chervil)

Steps:

  • Heat 2 tablespoons butter in a 12" heavy skillet over medium-low heat. Add onions and cook, stirring constantly, until translucent (do not brown), 10-12 minutes. Add stock and 3/4 cup water. Bring to a simmer, reduce heat to low, cover, and continue to simmer until onions are falling apart, about 20 minutes. Uncover and stir until onions are almost dry (do not brown), about 5 minutes. Transfer onions to a blender. Add buttermilk and 1 tablespoon water. Purée until smooth. Season with kosher salt.
  • Preheat oven to 350°F. Arrange a wire rack inside a rimmed baking sheet. Melt 2 tablespoons butter with oil in a large cast-iron skillet or large heavy skillet over medium-high heat. Season steak generously with kosher salt. Cook until a deep brown crust forms, 3-4 minutes per side and 1-2 minutes on edges. Place on prepared rack. Roast until a thermometer inserted into steak registers 115°F, about 40 minutes. (Steak will carry over to medium-rare.) Let rest for 30 minutes.
  • Melt remaining 2 tablespoons butter in a large skillet over medium-high heat; cook until butter browns, about 2 minutes. Add steak and cook for 30 seconds per side, allowing steak to absorb butter. Cut steak into 4 slices. Place 1 steak slice on each plate and sprinkle with sea salt. Spoon warm onion purée alongside. Scatter herbs over purée.

PAN-ROASTED RIBEYE WITH CARAMELIZED ONIONS AND WHITE TRUFFLE BUTTER

Pan-Roasted Ribeye with Caramelized Onions and White Truffle Butter image

This is a savory steak with the slight sweetness of caramelized onions and the earthiness of truffle oil. I would serve this with some mashed goat cheese and a nice green veggie. This recipe could be for 2, you and your honey! A nice Cabernet would pair well, but I like so many that it's hard to choose. Cheers.

Yield Makes 6 servings

Number Of Ingredients 18

Gorgonzola butter
2 heads of garlic, top 3/4 inch cut off to expose cloves
2 tablespoons olive oil
1/2 cup (1 stick) unsalted butter, room temperature
1/3 cup crumbled Gorgonzola cheese (about 2 ounces)
2 tablespoons chopped fresh parsley
Onion rings
3 cups buttermilk
2 sweet onions (such as Vidalia or Walla Walla), thinly sliced into rounds, then separated into rings
3 cups unbleached all purpose flour
3 tablespoons onion powder
3 tablespoons garlic powder
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
4 cups canola oil (for frying)
Steaks
6 10- to 12-ounce rib-eye steaks
2 tablespoons olive oil

Steps:

  • For gorgonzola butter:
  • Preheat oven to 350°F. Place garlic on piece of foil; drizzle with olive oil. Enclose garlic in foil. Bake until garlic is very soft, about 1 hour. Cool. Squeeze garlic cloves out from papery skins into medium bowl; mash garlic with fork. Mix in butter, cheese, and parsley. Season with salt and pepper. Transfer Gorgonzola butter to sheet of plastic wrap. Using plastic wrap as aid, form butter into 1 1/4-inch-diameter log, wrapping plastic tightly around butter. Chill until firm. (Can be made 2 days ahead; keep chilled.) Cut into 1/2-inch-thick rounds.
  • For onion rings:
  • Pour buttermilk into large bowl. Add onion rings; toss to coat. Let stand 1 hour, tossing occasionally. Mix flour, onion powder, garlic powder, salt, and pepper in another large bowl.
  • Preheat oven to 350°F. Pour enough oil into heavy large skillet to reach depth of 3 inches. Heat over medium-high heat to 350°F. Working with a few onion rings at a time, shake off excess buttermilk, then turn onion rings in flour mixture to coat. Fry onion rings until deep golden brown, adjusting heat as necessary for each batch to maintain temperature at 350°F, about 2 minutes. Transfer onion rings to paper towels to drain, then place on baking sheet and keep warm in oven while frying remaining onion rings.
  • For steaks:
  • Brush steaks with olive oil; sprinkle with salt and pepper. Heat 2 large nonstick skillets over medium-high heat. Add 3 steaks to each skillet and cook to desired doneness, about 4 minutes per side for medium-rare. Serve with Gorgonzola butter and onion rings.

  • Pat salt, pepper and garlic flakes evenly onto meat.

  • Pour oil in 10-inch non-stick pan and heat over high heat (tilt to cover bottom of pan with oil).
  • When oil is hot, add steak and brown on both sides, about 4 minutes total.
  • Supporting meat with tongs, tip steak onto its edge and rotate to brown lightly, about 2 minutes total.
  • As fat accumulates in pan, wipe it out with paper towels.
  • Put steak on oven-safe plate and bake in 400°F oven until meat is done to your liking, 8 to 12 minutes for rare or about 20 minutes for well done.
  • Remove plate from oven.
  • Turn oven heat to broil.
  • Remove fat from plate with a paper towel.
  • Mound French onions on meat and sprinkle with 1/2 cup shredded Swiss cheese.
  • Broil in pan about 6 inches from heat until cheese bubbles and begins to brown, 3 to 4 minutes.
  • Remove pan from oven and pour broth around meat, stirring to release browned bits.
  • To serve, cut meat and onions into 4 equal portions.
  • Transfer to individual plates and spoon juices around meat.

Tips:

  • Select a Thick Rib-Eye Steak: Choose a steak that is at least 1.5 inches thick for a juicy and flavorful result.
  • Bring Steak to Room Temperature: Allow the steak to rest at room temperature for about 30 minutes before cooking. This helps the steak cook more evenly.
  • Season Liberally: Season the steak generously with salt and pepper, ensuring that all sides are well-coated.
  • Use a Cast-Iron Skillet: If possible, use a cast-iron skillet for cooking the steak. It retains heat well and provides a nice sear.
  • Sear Steak Over High Heat: Sear the steak over high heat for 2-3 minutes per side, or until a nice crust forms.
  • Reduce Heat and Continue Cooking: After searing, reduce the heat to medium and continue cooking the steak for 5-7 minutes per side, or until it reaches your desired doneness.
  • Let Steak Rest: Once the steak is cooked, remove it from the skillet and let it rest for 5-10 minutes before slicing and serving. This allows the juices to redistribute throughout the steak.
  • Use Sweet Vidalia Onions: For the best flavor, use sweet Vidalia onions in the recipe. They caramelize beautifully and add a delicious sweetness to the dish.
  • Slice Onions Thinly: Slice the onions thinly so that they cook evenly and caramelize properly.
  • Cook Onions Over Medium Heat: Cook the onions over medium heat, stirring occasionally, until they become soft and caramelized.
  • Add Onions to Steak: Once the onions are caramelized, add them to the steak and serve immediately.

Conclusion:

This delectable rib-eye steak with caramelized Vidalia onions is a mouthwatering dish that combines the flavors of juicy steak and sweet, savory onions. By following the tips and steps outlined in this recipe, you can easily create a restaurant-quality meal at home. Whether you're a seasoned cook or just starting out, this recipe is sure to impress your taste buds and leave you craving more.
