- Preheat the oven to 275 degrees F.
- Season the meat on all sides with the Essence, salt, and pepper. Heat the oil in a large Dutch oven and brown on all sides, about 4 minutes per side. Remove the roast from the pan and add the onion slices and thyme sprigs. Place the roast on top of the onions, fat side up. Add the beef broth to the pan and place in the oven, uncovered. Roast until the beef is tender and registers an internal temperature of 130 to 135 degrees F, about 1 1/2 to 2 hours.
- Transfer the roast to a platter or cutting board and let rest for 15 minutes before carving.
- Meanwhile, use a slotted spoon to discard the onions and thyme sprigs. Place the Dutch oven over medium-high heat to heat the beef drippings. Combine the cornstarch and water in a small bowl until dissolved. Add the cornstarch mixture to the beef drippings and bring to a boil. Cook, stirring constantly, until slightly thickened, 2 to 3 minutes. Remove from the heat and carefully transfer to a gravy boat or decorative bowl.
- Carve the beef thinly and arrange the slices on large plates with rice on the side. Drizzle gravy over each portion and serve alongside of the Easy Rice.

- Preheat oven to 375°F.
- Pour vegetable oil into pan about 1/4-1/2 inch deep, and place on medium high heated burner.
- Season pork chops with garlic salt and pepper.
- Cover pork chops on both sides with FLOUR.
- When oil is hot, brown pork chops on both sides.
- Place pork chops in baking dish, and cover with water (the amount of water decides how much gravy you will have, so you decide. I suggest about 1 1/2 inches deep in an 8x11 1/2 inch pan). Place pan in oven and bake at 375°F for about 25 minutes or until pork chops are no longer pink inside.
- Take pork chops out of the oven and pour the brown gravy mix into water.
- Return pork chops to the over and bake for an additional 10 minutes.
- Now is the time to make the rice.
- Prepare according to package directions.
- Take pork chops out of the oven and serve with gravy over rice.

- Place rice in a saucepan with 4 cups of water. Bring to a boil, then reduce heat to low, cover and simmer for 20 minutes or until rice is tender. Prepare chicken while the rice is cooking.
- In a medium bowl, stir together the flour, 1/2 teaspoon salt, pepper, paprika, and thyme. Use a finger to grind the thyme to a powder in the palm of your hand before adding. Coat the chicken breasts in the flour mixture. Reserve 2 tablespoons of the flour mixture for the gravy.
- Melt butter in a large skillet over medium heat. Place chicken in the skillet, and cook for about 10 minutes on each side, until the chicken is golden brown, and the juices run clear. Remove chicken from the pan, leaving the drippings and crusty bits in.
- Whisk together 3/4 cup water, 2 tablespoons of the flour mixture, and 1/4 teaspoon salt. Whisk into the skillet, scraping the browned bits from the bottom of the pan. Cook over medium heat, stirring constantly, until thick and bubbly. Add additional water 1 tablespoon at a time if the gravy is too thick. Serve chicken alongside rice topped with gravy.

- 1. Clean and boil gizzards for an hour and a half to two hours. It takes this long to make sure they are "fork tender" Then cut into 2-3 pieces each depending on their size.
- 2. Chop onions, celery and bell pepper set aside.
- 3. Make your roux with 1 stick butter and 1/2 cup flour. Make a dark roux Once roux is desired color add the chopped onions, celery and bell pepper.
- 4. After about 10 minutes the onions will become clear and the celery and bell pepper tender, now is time to add the stock.
- 5. Add a little bit of stock at a time and stir until well mixed and thick. Continue to add stock to get to a soupy consistency.
- 6. Now add the gizzards/hearts and mix. Turn to a low heat and let simmer for at least 30 minutes. An hour is better then serve over rice.
- 7. This is what the consistency should look like when done. If it gets too thick either add more stock or a bit of hot water. You want this thick over the rice not soupy.

- In a shallow pan, add flour, 1 Tbsp paprika, and 1/2 Tbsp salt. Mix well.
- In a medium bowl, add eggs, 1/4 C water, remaining paprika, and salt. Mix well.
- Season the chops on both sides with garlic powder and black pepper.
- In a medium saucepan, heat the oil over medium high heat until shimmering.
- Prepare the rice as desired. You can optionally par broil the rice in olive oil before cooking.
- Dredge the chops in the seasoned flour, then the egg mixture, and in the flour again, shaking off excess of each. Reserve the flour.
- Place the chops in the oil and fry until golden brown. Set aside and keep warm.
- Drain all but 2 Tbsp of the oil.
- Add about 1 C of the reserved flour and brown to a Carmel colored roux.
- Add beef stock and enough water to desired consistency, about 1 - 1/2 cup. Simmer for about 10 minutes.
- Serve gravy over rice and chops (if desired). Enjoy.
RICE AND GRAVY
Steps:
- Place the peas in a medium saucepan and cover with cold water. Add 1 tablespoon of the bacon grease and the salt. Bring to a simmer and cook the peas until tender, about 1 hour.
- Remove from the heat, drain and set aside.
- In a medium cast-iron pan set over medium heat, add the remaining 1 tablespoon bacon grease, the flour and some salt and pepper. Constantly stir the flour until it just starts to turn deep golden brown and resembles peanut butter. Add 2 1/4 cups water, and continue to stir, scraping the browned bits from the bottom of the pot. Continue to stir until thick and bubbly.
- Add the cooked peas to the gravy and reduce the heat to low. Cook for 10 more minutes, then add a little more flour or water if needed to achieve the desired consistency. Add salt to taste and serve over the rice.

- 1. PORK CHOPS: In an oven proof skillet add about 1/4c canola oil and heat. Season chops with Mrs. Dash then lightly brown on both sides. Add 1/2 c of chopped onions, 1/2 c chopped celery and 1/2 c shredded carrots on top of chops. Add 1-2 c of chicken broth, depending on how many chops you have. You want the chops almost covered with broth. Cover and bake on 400° for about 45 min. Remove from oven and move chops to one side of pan, add flour into broth and stir well to make a gravy, mix chops back in with gravy.
- 2. RICE: Add 4 tbs of butter to sauce pan and melt. Add 1/2 c of shredded carrots, 1/2 c of chopped celery and 1/2 c chopped onions. Simmer for about 10 min. till they start to become tender.
- 3. Add 1 c of long grain and wild rice and 2 c. of chicken broth. Bring to a boil, then return to simmer and cook with lid on for 45-55 min. till tender.
- 4. Serve a helping of rice with some pork chops and gravy on top.
