Steps:
- Preheat the oven to 275 degrees F.
- Season the meat on all sides with the Essence, salt, and pepper. Heat the oil in a large Dutch oven and brown on all sides, about 4 minutes per side. Remove the roast from the pan and add the onion slices and thyme sprigs. Place the roast on top of the onions, fat side up. Add the beef broth to the pan and place in the oven, uncovered. Roast until the beef is tender and registers an internal temperature of 130 to 135 degrees F, about 1 1/2 to 2 hours.
- Transfer the roast to a platter or cutting board and let rest for 15 minutes before carving.
- Meanwhile, use a slotted spoon to discard the onions and thyme sprigs. Place the Dutch oven over medium-high heat to heat the beef drippings. Combine the cornstarch and water in a small bowl until dissolved. Add the cornstarch mixture to the beef drippings and bring to a boil. Cook, stirring constantly, until slightly thickened, 2 to 3 minutes. Remove from the heat and carefully transfer to a gravy boat or decorative bowl.
- Carve the beef thinly and arrange the slices on large plates with rice on the side. Drizzle gravy over each portion and serve alongside of the Easy Rice.
- Combine all ingredients thoroughly.

- In a 2-quart saucepan, combine the rice, water, butter and salt, and bring to a boil over high heat. Reduce the heat to low, cover, and simmer until all the liquid is absorbed, about 20 minutes. Remove the pan from the heat and let sit, covered, for 10 minutes. Uncover and fluff the rice with a fork before serving.

Steps:
- Place rice in a saucepan with 4 cups of water. Bring to a boil, then reduce heat to low, cover and simmer for 20 minutes or until rice is tender. Prepare chicken while the rice is cooking.
- In a medium bowl, stir together the flour, 1/2 teaspoon salt, pepper, paprika, and thyme. Use a finger to grind the thyme to a powder in the palm of your hand before adding. Coat the chicken breasts in the flour mixture. Reserve 2 tablespoons of the flour mixture for the gravy.
- Melt butter in a large skillet over medium heat. Place chicken in the skillet, and cook for about 10 minutes on each side, until the chicken is golden brown, and the juices run clear. Remove chicken from the pan, leaving the drippings and crusty bits in.
- Whisk together 3/4 cup water, 2 tablespoons of the flour mixture, and 1/4 teaspoon salt. Whisk into the skillet, scraping the browned bits from the bottom of the pan. Cook over medium heat, stirring constantly, until thick and bubbly. Add additional water 1 tablespoon at a time if the gravy is too thick. Serve chicken alongside rice topped with gravy.

DAVID'S GIZZARDS AND GRAVY OVER RICE
I love gizzards and hearts cooked this way best, I do also like them deep fried. When I made this last night I didn't eat it so I'll be posting a picture of the final dish tonight after I get home. I'm really looking forward to eating a bowl or three of this tonight :) Bon Appetite!

Steps:
- 1. Clean and boil gizzards for an hour and a half to two hours. It takes this long to make sure they are "fork tender" Then cut into 2-3 pieces each depending on their size.
- 2. Chop onions, celery and bell pepper set aside.
- 3. Make your roux with 1 stick butter and 1/2 cup flour. Make a dark roux Once roux is desired color add the chopped onions, celery and bell pepper.
- 4. After about 10 minutes the onions will become clear and the celery and bell pepper tender, now is time to add the stock.
- 5. Add a little bit of stock at a time and stir until well mixed and thick. Continue to add stock to get to a soupy consistency.
- 6. Now add the gizzards/hearts and mix. Turn to a low heat and let simmer for at least 30 minutes. An hour is better then serve over rice.
- 7. This is what the consistency should look like when done. If it gets too thick either add more stock or a bit of hot water. You want this thick over the rice not soupy.

EASY DIRTY RICE WITH CAJUN SPICED GRAVY
This recipe is so easy and absolutely perfect for the Pampered Chef rice cooker. Just put all of the ingredients in the rice cooker, put it in the microwave and set the timer and forget it. Then, just stir up the gravy and you have a wonderful cajun themed side dish that goes great with most any cajun style meat dish. I hope...

Steps:
- 1. Heat olive oil in heavy skillet. When olive oil is hot, add onions and andouille sausage. Saute until onions are transparent and sausage is browned. Set aside.
- 2. In Pampered Chef rice cooker, add chicken broth. Stir in rice and seasonings. Add onions and sausage, stir well. Place cover on rice cooker and microwave on high for 20 minutes.
- 3. Remove cooker from microwave and remove cover. Add a small amount of butter, if desired and fluff with fork, making sure all liquid is absorbed and rice is tender. You may cover and return to microwave for about 5 more minutes if necessary. Serve with Cajun Spiced Gravy (directions to follow).
- 4. CAJUN SPICED GRAVY: Melt butter in heavy saucepan. When butter is melted, whisk in flour until well blended. Combine broth, milk and seasonings and slowly whisk into butter mixture. Bring to a boil on medium heat, stirring constantly and cook until thickened. If gravy seems too thin, mix about a tablespoon of flour with a little milk to make a thin paste and whisk in a little at a time until desired thickness is reached. If mixture seems too thick, you may add a little more milk. Remove from heat and transfer to serving dish to serve with dirty rice.
- 5. SPECIAL NOTE: This rice dish can be made on top of the stove in a heavy saucepan, but reduce the broth from three cups to two cups. In my experience, the Pampered Chef cooker requires more liquid than the stove top.

Tips:
- Use high-quality ingredients: The better the ingredients, the better the gravy. Use fresh vegetables, herbs, and spices, and choose a flavorful cut of meat or poultry.
- Don't overcrowd the pan: When browning the meat or vegetables, don't overcrowd the pan. This will prevent them from cooking evenly and will result in a watery gravy.
- Cook the gravy slowly: Gravy needs time to develop its flavor. Simmer it over low heat for at least 30 minutes, or even longer if you have time.
- Thicken the gravy with flour or cornstarch: If you want a thicker gravy, you can thicken it with flour or cornstarch. Just whisk a small amount of flour or cornstarch with water until smooth, then add it to the gravy and cook until thickened.
- Season the gravy to taste: Once the gravy is thickened, season it to taste with salt, pepper, and other spices. You can also add a splash of acid, such as lemon juice or vinegar, to brighten the flavor.
Conclusion:
Rice gravy is a versatile dish that can be served with a variety of main courses. It's a great way to add flavor and moisture to your meals. With a little practice, you can make a delicious rice gravy that your family and friends will love.
