This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

A friend of my mother's made this when I was younger. It was the BEST potato dish I'd ever had. Thirty years later - and lots of tinkering - I finally replicated it. Now my husband and kids are big fans, too. I hope your family enjoys this as much as we do.

CHEESY RANCH POTATOES RECIPE

Cheesy Ranch Potatoes Recipe image

Yield 8

Number Of Ingredients 10

4 large russet potatoes
4 ounces cream cheese (softened)
1/4 cup sour cream
1/4 onion (finely chopped)
1 cup shredded Colby Jack cheese (divided)
5 strips bacon (cooked and crumbled)
1/4 teaspoon salt
1/2 cup milk
1 (1 ounce) package dry ranch dressing mix
4 green onions (finely chopped)

Steps:

  • Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool slightly.
  • Preheat oven to 350 degrees. Grease an 11 x 7 inch baking pan.
  • Combine cream cheese and sour cream in a large bowl; beat until smooth.
  • Add yellow onion, half of the cheese, half of the bacon bits and salt. Mix well.
  • When potatoes are cool enough to handle, cut in half. Scoop out pulp and mash potatoes.
  • Then add to the cream cheese mixture. Beat with a mixer. Stir in milk, dry ranch dressing mix, and mix well.
  • Spread potato mixture in prepared pan. Bake uncovered 30 minutes. Remove from oven, sprinkle with remaining cheese, bacon pieces, and green onions.
  • Bake 5 minutes longer, or until cheese melts.

Tips:

  • Choose the right potatoes: Russet potatoes are a good choice for this recipe because they are starchy and will hold their shape well. You can also use Yukon Gold potatoes, but they may be more likely to fall apart.
  • Don't overcook the potatoes: The potatoes should be cooked until they are tender-crisp, but not mushy. Overcooked potatoes will make the casserole too soft.
  • Use a good quality ranch dressing: The ranch dressing is one of the main flavors in this casserole, so it's important to use a good quality dressing. You can use your favorite store-bought dressing, or you can make your own.
  • Don't skimp on the cheese: The cheese is another important flavor in this casserole, so don't be afraid to use a lot of it. You can use a variety of cheeses, such as cheddar, Monterey Jack, or mozzarella.
  • Bake the casserole until it is golden brown: The casserole is done baking when it is golden brown and bubbly. This usually takes about 30 minutes.

Conclusion:

This rich, creamy, cheesy ranch potato casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It is sure to be a hit with your family and friends. So next time you are looking for a new potato casserole recipe, give this one a try. You won't be disappointed!
