1/4 cup chopped prunes
1/4 cup toasted slivered almonds, chopped, plus more for garnish
3 tablespoons lemon olive oil
4 pork loin rib chops, 1 1/2 inches thick
Course salt and freshly ground black pepper
2 ounces goat cheese

Steps:

  • In a bowl, mix the prunes and almonds with 1 tablespoon of lemon olive oil.
  • Cut a pocket on the side of each pork chop from the fat side to the bone. Season the outside of each chop with salt and pepper, to taste. Stuff each chop with 1/2-ounce of goat cheese, pushing it to the bottom of the opening, then stuff with the prune mixture. Secure with toothpicks.
  • Heat the remaining 2 tablespoons lemon olive oil in a large shallow Dutch oven over medium-high heat. Sear the chops on both sides until golden brown. Add water to come 1/4 of the way up the side of chops. Cover and simmer until the chops are cooked, about 15 to 20 minutes. Remove chops to a serving platter and simmer the liquid and any stuffing drippings until reduced to a thick sauce. Pour the sauce over the chops and serve garnished with toasted almonds.

1-1/2 cups chopped fresh mushrooms
4 green onions, finely chopped
1/3 cup finely chopped celery
1 tablespoon butter
1 small tomato, chopped
1/4 to 1/2 teaspoon dried marjoram
1/8 to 1/4 teaspoon garlic salt
1/8 teaspoon pepper
2 slices day-old white bread, cut into 1/4-inch cubes
4 bone-in pork loin chops (1 to 1-1/2 inches thick and 7 ounces each)

Steps:

  • In a large skillet over medium heat, saute the mushrooms, onions and celery in butter until vegetables are tender. Add the tomato, marjoram, garlic salt and pepper; cook and stir for 5 minutes. Remove from the heat and stir in bread cubes. , Cut a large pocket in the side of each chop. Stuff mushroom mixture into pockets. Place chops in an ungreased shallow baking pan. 2 tablespoons fresh parsley, chopped

Steps:

  • Preheat oven to 350° F (180°C).
  • Cut the stems off of each of the mushrooms and finely chop them, setting the mushroom caps aside for later.
  • Heat the oil in a pan over high heat. Cook the chopped stems with the garlic, salt, and pepper for about six to eight minutes, constantly stirring. Be careful not to burn the garlic. Remove from heat.
  • In a medium bowl, combine cooked stems, cream cheese, breadcrumbs, half of the parmesan, parsley, salt, and pepper, mixing until evenly combined. The mixture should be extremely thick.

1 (6 ounce) package chicken flavored dry stuffing mix
1 (8 ounce) package cream cheese, softened
½ pound imitation crabmeat, flaked
2 cups butter
2 cloves garlic, peeled and minced
salt and pepper to taste
garlic powder to taste
crushed red pepper to taste

Steps:

  • Arrange mushroom caps on a medium baking sheet, bottoms up. Chop and reserve mushroom stems.
  • Prepare chicken flavored dry stuffing mix according to package directions.
  • Preheat oven to 350 degrees F (175 degrees C).

6 pork chops, medium thickness boneless & trimmed (1 3/4 lbs)
1 (6 ounce) package Stove Top stuffing mix
1 tablespoon brown sugar
1 (10 ounce) can cream of mushroom soup
0.5 (10 ounce) can sliced mushrooms, drained (optional)
1/3 cup water (or milk)
2 -2 1/2 tablespoons Worcestershire sauce
1 teaspoon dried onion flakes (optional)

Steps:

  • Preheat oven to broil.
  • Place chops (I tenderize mine abit) in a large rectangular pan and broil at close range about 1 minute per side. Remove chops from oven, drain excess grease from pan.
  • Reset oven to 350°F.
  • In a medium pot, prepare stuffing according to package directions, along with the brown sugar.
  • Return chops to pan and mound stuffing on top of each pork chop.
  • For the sauce, in the same pot used to prepare stuffing, combine in this order with no heat; soup, gradually stir in water (or milk) and Worcestershire sauce. Stir until blended. Spoon equally over stuffed chops.
  • Bake for 25 minutes until chops are cooked and no longer pink (30-35 minutes for thicker chops).

1 cup yellow onion, minced
1 clove garlic, minced
2 cans Campbell's® Cream of Mushroom Soup
½ cup vegetable stock
1 teaspoon lemon juice, plus more to taste
½ tablespoon fresh thyme leaf, chopped
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 tablespoon olive oil
3 cups white mushroom, roughly chopped
2 ½ cups kale leaves
1 cup spinach, chopped
½ teaspoon kosher salt, plus more to taste
½ cup ricotta cheese
1 cup freshly shredded parmesan cheese, divided
1 package pasta shells, jumbo, cooked according to package instructions

Steps:

  • Preheat the oven to 400°F (200°C).
  • Make the mushroom sauce: Melt the butter in a medium pot over medium heat. Add the onion and sauté for 2-3 minutes, until the onion is translucent. Stir in the garlic and cook for 1 minute more, until fragrant. Add the Campbell's® Cream of Mushroom Soup, vegetable stock, lemon juice, thyme, salt, and pepper and whisk until smooth. Bring to a simmer and cook, stirring occasionally, for 3-5 minutes, until the sauce has thickened slightly. Remove the pot from the heat.
  • Make the stuffed shells: Heat the olive oil in a large, high-walled skillet over medium-high heat until simmering. Add the mushrooms and cook for 4-5 minutes, until softened and starting to brown. Stir in the kale and cook for another 3-4 minutes, or until reduced in volume and softened. Add the spinach and cook until wilted, 1-2 minutes. Turn off the heat and stir in the salt, 1 cup of the mushroom sauce, the ricotta, and ½ cup Parmesan until well combined. Season with more salt to taste.
  • Spread half of the remaining mushroom sauce (about ½ cup) on the bottom of an 8-inch square baking dish.
  • Stuff each pasta shell with 1½-2 tablespoons of the filling, then arrange in rows in the baking dish, filling-side up. Drizzle the remaining mushroom sauce on top, then sprinkle with the remaining ½ cup Parmesan cheese.
  • Transfer the shells to the oven and bake for 10 minutes, or until the cheese is melted and the sauce is bubbling.
  • Turn the broiler on high and broil the shells until the cheese is browned, 1-2 minutes. Remove from the oven and let rest for 2-3 minutes before serving.

1 sweet potato, raw
1 cup frozen chopped broccoli
1 whole wheat roll

1 tablespoon slivered almonds

Steps:

  • Wash green onions and mushrooms; thinly slice green onions and chop mushrooms.
  • Heat 1/2 ounce (1 tablespoon) of the chicken stock in medium skillet over medium heat.
