Make this with cherry tomatoes or grape tomatoes, or even normal tomatoes cut into chunks. The vinaigrette is slightly thickened with mustard so it clings to the tomato better, and a touch of red onion provides some much needed freshness.

RIPLEY TOMATO SALAD

Ripley Tomato Salad image

From Folk's Folly Steakhouse in Memphis, TN. This will fill you up if you eat it by yourself. This plus one slice of french bread is a divine dinner! Ripley tomatoes are from Ripley, TN and I have no clue if you can get them outside of TN & MS. If you can't get one, just get the biggest firmest one you can find! Ripley tomatoes are so red they almost look fake when they are ripe. Use low fat cheese and dressing to save calories. I use fresh ground black pepper and fresh ground sea salt. I use a TON of basil b/c I LOVE it -- use it to taste. PS This is the ONLY way I eat tomatoes -- period. Cook time is assembly time and serving size depdends on if you serve it alone or as a side.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will make a big difference in the taste of your salad. Look for tomatoes that are deep red and have a slightly sweet smell.
  • Use a variety of tomatoes: Don't be afraid to mix and match different types of tomatoes in your salad. This will add complexity and flavor to the dish.
  • Slice the tomatoes thinly: This will help the tomatoes release their juices and absorb the flavors of the other ingredients.
  • Season the tomatoes well: Don't be shy with the salt and pepper. A little bit of seasoning can go a long way in enhancing the flavor of the tomatoes.
  • Add other vegetables and herbs: Feel free to add other vegetables and herbs to your salad, such as cucumbers, bell peppers, onions, basil, or oregano.
  • Use a good quality olive oil: The olive oil you use will also make a big difference in the taste of your salad. Look for a good quality, extra virgin olive oil.
  • Let the salad rest before serving: This will allow the flavors to meld together and the tomatoes to release even more of their juices.

Conclusion:

Ripley tomato salad is a delicious and refreshing salad that is perfect for a summer lunch or dinner. It is easy to make and can be customized to your liking. With a few simple ingredients, you can create a salad that is both flavorful and healthy.
