FENNEL RISOTTO
Don't let the strong taste of fennel scare you: it fades down after cooking. This is a rich and creamy risotto, just like it ought to be! You can use chicken stock in place of the vegetable stock, as well as olive oil for the butter.

Steps:
- Cut the base off of the fennel bulbs, and cut a cone shape into the base to remove the core. Slice the fennel vertically (lengthwise) into 1/4 inch thick slices.
- Melt butter in a heavy-bottomed stock pot over medium heat. Cook onions and fennel in butter for 2 minutes. Stir in the rice; cook for another 2 minutes, stirring constantly, until lightly toasted. Stir in 1 cup vegetable broth; continue stirring until liquid is almost completely absorbed. Repeat this process with remaining broth, stirring constantly. Incorporating the broth should take 15 to 20 minutes in all.
- Stir in cream, 3 tablespoons Parmesan and parsley, and cook until rice is done and risotto is thick and creamy. Season to taste with black pepper. Divide risotto among 6 bowls, and sprinkle with remaining cheese.

FENNEL AND BLACK BEAN SOUP
I started throwing ingredients together on a cold wintry day - this fabulous thick and warming soup was the result. The fennel adds brightness and provides a nice contrast to the hearty beans and the heat of the crushed pepper.

Steps:
- Remove and discard outer leaves of fennel bulbs and finely chop bulbs. Chop fennel tops and reserve. Use a mortar and pestle to crush garlic, chilies, fennel seeds and 1 teaspoon coarse sea salt, forming a paste. In a medium-size, nonreactive bowl, mix together vodka, lemon juice and chopped fennel tops. Set aside to macerate. In a medium stockpot, bring broth to a simmer over high heat. Reduce heat to low. In a heavy-bottomed saucepan over medium heat, melt half of butter along with oil. Add onions and sweat 2 minutes. Add fennel seed paste and stir to combine. Add chopped fennel bulb and cook, stirring, until soft, 7 minutes. Add rice and stir to coat. Start adding broth, one ladle at a time. CRAB, LEMON, FENNEL AND CHILLI RISOTTO
Risotto can go one of two ways: horribly wrong or oh so right. If it's wrong, it's gluey, under or overcooked and dry. Done well, it's oozy, gooey and decadent.

Steps:
- Heat the stock in a saucepan. In a separate pan, heat two tablespoons of olive oil, then add the onion and fennel (not the fronds). Fry for about 8 minutes until they are soft but not coloured. Add the garlic and fry for a further minute. Add the wine and simmer for a further five minutes.
- Add the rice and stir well until it has absorbed the wine a little and has begun to become translucent. Add the stock to the rice a ladle at a time, stirring and waiting until it has been fully absorbed before adding the next. Turn the heat down to low so the rice doesn't cook too quickly, otherwise the outside of each grain will be stodgy and the inside hard and nutty. Continue to add ladlefuls of stock until it has all be absorbed. This should take about 14 to 15 minutes and give you rice that is beginning to soften but is still a little al dente.
- Zest the lemon and add half to the risotto, reserving a little for the garnish. Squeeze the juice of the lemon in adding the crab, chilli and pecorino. Stir well. Add a good crack of black pepper and salt to taste.
- To serve, ladle into bowls and top with the fennel fronds, lemon zest, a sprinkling of pecorino and a drizzle of olive oil.
FENNEL AND BROAD BEAN RISOTTO
My boyfriend's aunt taught me to make risotto so this recipe is inspired by her. You really need to stand by the pot all the time for this so make sure to prepare everything before you start. I don't like it too rich so I add the cheese myself after serving, but if you like it creamy add the cheese while in the pot and stir well.

Tips:
- Mise en place: Before you start cooking, make sure you have all of your ingredients prepped and measured. This will help you stay organized and ensure that your risotto cooks evenly.
- Use high-quality ingredients: The better the ingredients you use, the better your risotto will taste. Look for fresh, flavorful vegetables and a good quality broth.
- Toast the rice: Toasting the rice before you add the liquid helps to bring out its flavor and prevent it from becoming mushy.
- Add the liquid gradually: Don't add all of the liquid at once. Instead, add it in small increments, stirring constantly. This will help the rice to absorb the liquid evenly and prevent it from becoming too soupy.
- Cook the risotto until it is al dente: The rice should be cooked through, but still have a slight bite to it. Overcooked risotto is mushy and unpleasant.
- Stir the risotto frequently: Stirring the risotto helps to distribute the heat evenly and prevent it from sticking to the pot.
- Add the cheese and butter at the end: Once the risotto is cooked, stir in the cheese and butter. This will help to create a creamy, flavorful sauce.
- Serve the risotto immediately: Risotto is best served immediately after it is cooked. Leftover risotto can be reheated, but it will not be as good as fresh.
Conclusion:
Risotto is a delicious and versatile dish that can be made with a variety of ingredients. With a little practice, you can make a perfect risotto that will impress your friends and family. So next time you're looking for a new recipe to try, give risotto a try!
