ROAST BEAST (OK, BEEF)

Roast Beast (Ok, Beef) image

Make and share this Roast Beast (Ok, Beef) recipe from Food.com.

Provided by Sandi From CA

Categories     One Dish Meal

Time 1h40m

Yield 8-12 serving(s)

Number Of Ingredients 10

1 (6 lb) top sirloin roast
2 medium onions, quartered and separated
2 lbs carrots, cut in 2 inch chunks
4 lbs potatoes, scrubbed and skin on cut in eighths
1/2 teaspoon ground coriander
1 teaspoon powdered ginger
1 1/2 teaspoons minced garlic
2 teaspoons cracked black pepper
1 teaspoon sweet Hungarian paprika
3 teaspoons kosher salt

Steps:

  • Mix all the spices and the salt together. Moisten the roast with a little bit of water so the spices will stick. Sprinkle the mixture all over the roast and rub or press it in with your hand. Spank that puppy! Show him who's boss!
  • Place the roast, fat side up, in the center of a large roasting pan. Spread the onions, carrots and potatoes all around the roast. Don't worry, they're all friends and won't mind the close proximity. Roast in the oven at 375° for 15-20 minutes per pound depending on how silent you like your beef. Stir the vegetables about every 20 minutes, which will coat them with the juices and spices. Your best bet is to use a meat thermometer. Unless you're God, in which case you won't be needing THAT! Ha-Ha!
  • Ha.
  • Ok then, for rare beef, remove the meat from the oven at about 115-120°. For medium around 135-140°. Let the roast rest (shhh!), preferably 10-20 minutes. The internal temperature will go up 5-10° during that time. If you are cooking a smaller roast or the veggies are still hardened criminals, continue to cook them while the roast takes her nap. Slice and serve your moo with a heapin' helpin' of veggies. And thank the cow. She kinda gave up a lot.

BARBECUED ROAST BEEF ON A BUN

Barbecued Roast Beef on a Bun image

I'm going to show you one of my favorite methods for barbecuing relatively inexpensive cuts of beef. If you're wondering "how can it be barbecued, and roast beef?" don't worry about it, because we are not barbecuing or roasting-we are actually grilling. By using this technique, we can transform those cheaper cuts of beef into something absolutely gorgeous. Serve on buns with mayonnaise, pickle slices, and a drizzle of barbecue sauce.

Provided by Chef John

Time 16h40m

Yield 6

Number Of Ingredients 11

2 teaspoons kosher salt
1 ½ teaspoons white sugar
1 ½ teaspoons freshly ground black pepper
½ teaspoon cayenne pepper
1 ½ pounds boneless top round steak
2 tablespoons barbecue sauce
2 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
⅛ teaspoon ground turmeric
3 cloves garlic, minced
6 (2 ounce) hamburger buns, split

Steps:

  • Mix salt, sugar, pepper, and cayenne for dry rub together and coat beef well on both sides.
  • Place on a rack set on a sheet pan and refrigerate, uncovered, for 12 to 24 hours, flipping over halfway through.
  • Mix barbecue sauce, vinegar, mustard, turmeric, and garlic together for wet rub and reserve.
  • Transfer beef to a dish and pour 1/2 of the wet rub over top. Use two forks to poke the surface all over for about 1 minute. Turn beef over and repeat with remaining wet rub. Spoon any excess on the bottom over the top.
  • Cover and refrigerate for 4 to 12 hours.
  • Preheat a charcoal grill until the briquettes turn white and ashy. Remove meat from the refrigerator, uncover, and scrape off excess wet rub.
  • Grill over hot charcoal until blackened and an instant-read thermometer inserted into the center of the meat reads 120 to 125 degrees F (49 to 52 degrees C), 7 to 10 minutes per side, or to desired doneness. Remove to a foil-lined plate, and quickly wrap up tightly in foil.
  • Let rest for at least 15 minutes, during which time the meat will finish cooking, and end up close to medium-rare.
  • Slice very thinly, toss in the meat drippings and juices left in the foil, and serve on buns.

Tips:

  • Choose high-quality beef: Look for well-marbled meat with a bright red color. Avoid meat that is too lean or has a lot of connective tissue.
  • Season the beef liberally: Use a variety of spices and herbs to flavor the beef. Common seasonings include salt, pepper, garlic powder, onion powder, paprika, and thyme.
  • Sear the beef before roasting: Searing the beef creates a flavorful crust and helps to keep the juices in. Sear the beef in a hot skillet or grill for a few minutes per side.
  • Roast the beef at a low temperature: Roasting the beef at a low temperature helps to tenderize the meat and prevent it from drying out. Roast the beef at 250°F for 2-3 hours, or until it reaches an internal temperature of 135°F for medium-rare.
  • Let the beef rest before carving: Let the beef rest for 10-15 minutes before carving. This allows the juices to redistribute throughout the meat.
