A one-kilogram pheasant will serve four people a small amount each, but the meat and stuffing is rich. If you like, you can chop a little sage or tarragon to add to the butter, which you push under the skin of the breast.

100g stale sourdough or country-style bread, crusts removed
1/3 cup milk, warmed
1 onion, chopped
3 tbsp olive oil
salt and pepper
1 sprig rosemary or a few sprigs of thyme, chopped
6 chestnuts, peeled* and roughly chopped
3 tbsp grated parmesan
1 egg
1 kg pheasant
80g butter, softened
salt and pepper
olive oil
*To peel, slit along one side then boil in water for 10 minutes.Remove from heat and pull chestnuts out one at a time into a tea towel and peel while hot. if they do not peel easily put back in the hot water for a while.

Steps:

  • For the stuffing Cut the bread into cubes and place in a bowl with just enough warm milk to moisten and soften the bread. Cook the onions in the olive oil with a little salt and pepper until golden brown and soft. Add to the bread along with all the other ingredients and mix thoroughly. For the pheasant Preheat oven to 175C. Rinse pheasant, pat dry and chop off the head if still attached. Stuff the bird with the bread stuffing, then push a good bit of butter under the skin of the breasts. Season all over with salt and pepper, place in a baking pan along with your potatoes and vegetables, drizzle with a little olive oil and dot any remaining butter on top. Roast for about 40-45 minutes. To test if the pheasant is done, pierce the thigh with a skewer - the juices should run clear. Allow to rest, covered in a warm place for 10-15 minutes before serving.

2 tablespoons olive oil
1 small yellow onion, chopped
4 stalks celery, chopped

2 large Granny Smith apples, chopped
1 cup shelled and roasted chestnuts, chopped
3 to 4 cups chicken stock

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut the focaccia into small cubes and spread them out on a cookie sheet. Bake until dry and crunchy, 20 to 30 minutes.
  • In a thick-bottomed pot, heat the butter and oil over medium low. Add the onions, celery and thyme; sweat the vegetables for 10 to 12 minutes. Season with salt and pepper.
  • Turn the heat up to medium high and add the apples. Cook until the apples start to brown, 8 minutes.
  • Turn off the heat and add the chestnuts and bread; toss to mix.
  • Pour in the chicken stock, 1 cup at a time, mixing well between additions -- you want the mixture moist, not soaking wet.
  • Transfer the stuffing to a casserole dish, cover with foil and bake for 45 minutes. Uncover and bake for another 15 to 20 minutes, until golden.

2/3 cup finely diced celery
1 tablespoon finely chopped celery leaves
1/2 cup finely diced onion
1/2 teaspoon dried thyme

1 1/2 cups peeled, cooked chestnuts, quartered
1/2 to 1 cup chicken broth, homemade or low-sodium canned

Steps:

  • Preheat oven to 375 degrees. Combine all ingredients except butter and pheasants with 1/2 cup of broth in a large bowl. Add 6 tablespoons of the butter. Stir until mixture is well combined.

1 small white onion, finely diced
1 large stalk celery, finely diced
1/2 cup finely crushed plain salted crackers, such as wheat crackers
1 large egg

6 tablespoons chicken stock
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
1 fresh pheasant (about 2 1/4 pounds)
2 to 3 strips country-style smoked bacon
6 cups fresh corn kernels (6 ears)
1/2 habanero chile, seeds removed
1 tablespoon freshly squeezed lime juice
2 teaspoons salt

Steps:

  • To prepare the stuffing: Melt the butter in a saute pan over low heat. Add the onion and celery and cook for 20 minutes, or until the onion is cooked through but not brown. Set aside. Put the crackers in a large bowl, add the egg, the cooked onion and celery, the sage, roasted corn, chicken stock, salt, and pepper and mix well. To stuff and roast the pheasant: Preheat the oven to 375 degrees. Season the pheasant cavity with some of the salt and pepper, then put the stuffing inside. Truss with skewers or tie with butcher's twine. Season the bird with the remaining salt and pepper. Lay the bacon over the breast. Place the pheasant on a metal roasting rack set inside a roasting pan and place on the middle rack of the oven. Roast for 25 minutes, basting the legs once or twice with the pan juices. After 25 minutes raise the temperature to 450 degrees and finish the bird for 10 minutes more, or until golden brown with an internal temperature of about 140 degrees near the thigh. To prepare the sauce: While the pheasant is roasting, puree the corn kernels in a food processor. You should have about 2 cups of pure. Place in a small saucepan with the habanero. Bring the juice to 200 degrees. Do not boil or the sauce will break. Add the lime juice and salt. To serve: Let the bird rest for 5 minutes before carving. Take the bacon off the breast and carve the bird, dividing the breast and thighs. Serve with the corn sauce and sauteed leeks.

2 loaves good-quality white bread, cut into 3/4-inch cubes (about 20 cups)
1 1/2 pounds fresh chestnuts (4 cups), scored with an X
3/4 cup unsalted butter (1 1/2 sticks)
4 small onions, peeled and cut into 1/4-inch dice (about 3 cups)
1 bunch celery, cut into 1/4-inch dice (about 4 cups)
3 tablespoons finely chopped fresh sage
5 cups homemade or store-bought low-sodium chicken stock

3 cups coarsely chopped fresh flat-leaf parsley

Steps:

  • Spread bread cubes in single layers on baking sheets. Let dry at room temperature, uncovered, overnight.
  • Bring a medium saucepan of water to a boil. Add chestnuts; cook until soft, about 20 minutes. Drain; let cool slightly. Peel and quarter chestnuts; set aside. Peeled chestnuts can be refrigerated in an airtight container 2 to 3 days.

2 tbsp vegetable oil , for frying
1 large pheasant crown (legs removed and kept for the stuffing - see tip below)
1 large onion , finely diced
3 garlic cloves , grated
1 parsnip , peeled and diced
50g pearl barley
200ml dry cider
400ml fresh chicken stock
3 thyme sprigs
100g small wild mushrooms or chestnut mushrooms, quartered if large
1 Braeburn apple , peeled and chopped into small cubes
1 tbsp chopped parsley
2 small onions (just bigger than a golf ball), peeled but left whole
2 pheasants legs, bones removed and minced with the skin (ask your butcher to do this - see tip)
50g pork sausagemeat
2 juniper berries , toasted and crushed
1 garlic clove , grated
1 tbsp fresh breadcrumbs
50g sprout tops or cavolo nero , stalks removed
small pinch of ground mace
1 tbsp grated chestnuts
1 small garlic clove
3 tbsp rapeseed oil
zest 0.5 lemon
6 sage leaves , fried until crisp, to serve

Steps:

  • First, start to make the stuffed onions. Heat oven to 140C/120C fan/gas 1. Lay the whole onions on a large sheet of foil and wrap up to make a parcel. Cook for 1 hr 30 mins or until soft, then remove and leave to cool. Turn up the oven to 180C/160 fan/gas 4.
  • While the onions are roasting, heat a medium flameproof casserole dish and add 1 tbsp oil. When the dish is hot, add the pheasant crown and brown on the skin side, then set aside. Add the remaining oil and the onion and fry for 10 mins until soft and starting to brown. Add the garlic and parsnip, cook for a few mins, then add the pearl barley and cider. Simmer until the cider has reduced by half, then pour in the chicken stock and keep on a low simmer for 15-20 mins.
  • Remove and discard the core from the baked onions using a teaspoon, making them hollow but still keeping them intact. In a mixing bowl, mix all the stuffing ingredients and season. Spoon the stuffing into the hollow onions, making sure that they are full. Roll any extra stuffing into small balls.
  • Add the pheasant crown and any balls to the simmering barley and sprinkle with a little salt, then add the stuffed onions and thyme. Cover with a lid and put in the oven for 20 mins.
  • To make the salsa, bring a pan of salted water to the boil and blanch the sprout tops until they are just soft, then plunge them into a bowl of iced water. Drain the leaves and squeeze out any excess water, then chop roughly. Add them to the small bowl of a food processor, along with the mace, chestnuts, garlic, rapeseed oil and lemon zest, and blitz until it becomes a rough salsa texture. Add a little seasoning to taste.
  • Once the pheasant is cooked, remove the dish from the oven and transfer the pheasant to a plate to rest. Cover loosely with foil. Return the barley to the heat and stir in the mushrooms, apple and parsley - using the mixture to baste the stuffed onions. When it becomes a rich and reasonably thick stew, remove from the heat.
  • Remove the breasts from the crown with a sharp knife and trim a little to neaten them. Spoon the pearl barley onto a large serving bowl or plate, put the pheasant breast on top and serve with the braised onions and extra meatballs. To finish the dish, add a large spoonful of the salsa and sprinkle over the crispy sage leaves.

¼ cup water
1 tablespoon chopped fresh thyme
2 tablespoons white sugar

¾ cup chicken stock
4 boneless, skinless pheasant breast halves
8 bacon strips
1 cup onion, finely chopped
¾ cup apple cider vinegar
1 (16 ounce) can pitted prunes, chopped
¾ cup heavy cream

Steps:

  • Place the apples into a small saucepan with the water, thyme, sugar, and salt. Bring to a boil over high heat, then reduce the heat to medium and simmer until the apples have softened and cooked down to a chunky applesauce, about 15 minutes. Remove the applesauce from the heat and stir in the breadcrumbs.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Prepare the pheasant breasts to be stuffed by cutting a pocket horizontally into each breast. Spoon the apple and bread crumb stuffing into each breast. Wrap each breast with two strips of bacon and place them into a baking dish with the chopped onion. Pour the chicken stock over the pheasant breasts and season with salt and pepper.
  • Roast the pheasant breasts in the preheated oven until well done and the juices from the meat run clear, 30 to 35 minutes.

2 large red bell peppers, cut into 3/4-inch pieces
1 pound fresh shiitake mushrooms, stemmed, caps cut into 1-inch pieces

10 tablespoons butter, melted
2 1/2 7.4-ounce jars whole roasted chestnuts, quartered (about 4 cups)

2 large eggs

Steps:

  • Preheat oven to 400°F. Place bread in large roasting pan. Bake until golden, stirring occasionally, about 15 minutes. Transfer bread to very large bowl; cool. Maintain oven temperature.
