2 teaspoons kosher salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon ground coriander
3 tablespoons lime juice
3 tablespoons orange juice
3 tablespoons olive oil
1 ½ teaspoons white wine vinegar
1 (4 pound) pork shoulder roast

Steps:

  • Grind garlic, salt, black pepper, cumin, oregano, and coriander into a paste using a mortar and pestle.
  • Transfer half of the garlic and spice paste to a bowl; add lime juice, orange juice, olive oil, and vinegar. Beat the mixture with a whisk until smooth.

½ teaspoon whole black peppercorns
4 cloves garlic, chopped
2 teaspoons salt

⅓ cup orange juice
⅓ cup dry sherry

4 pounds pork shoulder, trimmed and tied

Steps:

1/4 cup brown sugar

2 to 3 pound pork loin (boneless, center cut)

Steps:

1 bottle beer
Salt and freshly ground black pepper
1/4 cup orange juice
1/4 cup honey
3 tablespoons soy sauce
3 tablespoons sherry
2 tablespoons hoisin sauce
1/4 cup cooked back beans, mashed with a fork
2 tablespoons FiveSpice powder
4 cloves garlic, finely chopped
4 mandarin oranges or tangerines, peel and pith removed and cut into supremes
1/2 small bunch watercress, coarse stems removed

  • Preheat the oven to 425 degrees. Place the pork loin on a rack over a roasting pan and fill the bottom with about 1-inch of beer. Season the pork generously with salt and pepper.

1 cup KRAFT Zesty Italian Dressing
1/4 cup orange juice
2 Tbsp. fresh lime juice

2 large onions, cut into 1/2-inch-thick slices
6 cloves garlic, peeled, sliced

  • Pierce meat all over with tip of sharp knife. Place in large non-reactive bowl.
