1 (4 lb) pork loin roast
1 cup prepared applesauce
1/3 cup packed brown sugar
2 teaspoons vinegar
1/4 teaspoon ground cloves
1 garlic clove, cut in strips
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon pepper
1 teaspoon prepared mustard

Steps:

  • In a small bowl combine applesauce, brown sugar, vinegar and ground cloves, set aside.
  • Cut slits in top of the loin roast and insert garlic strips into those slits.
  • Combine flour, salt, sugar, pepper and mustard, like a rub and rub over the roast.
  • Place roast on a rack in a shallow roasting pan.
  • Bake uncovered, at 350°F until a thermometer reads 160 degrees.
  • Brush applesauce mixture over roast during the last 1/2 hour of baking.
  • When thermometer reads done, remove the roast to a warm serving platter.
  • To make gravy thicken broth in pan with cornstarch and water.
  • (Really sweet gravy though).

2 tablespoons vegetable oil
1 cup applesauce
3 tablespoons Dijon mustard
1 tablespoon honey
3 sprigs fresh rosemary

Steps:

  • Salt and pepper the roast on all sides.
  • Brown the roast on all sides in the oil, in a large skillet.
  • Place the roast on a rack in a shallow roasting pan.

2 cups applesauce, preferably unsweetened
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 500 degrees; set the oven rack as close to the top of the oven as possible, taking into account the thickness of the pork.
  • Drain the applesauce in a fine sieve to remove excess liquid. Line a roasting pan with a double layer of foil, and brush with a little oil.
  • Sprinkle the roast with salt and pepper, then spread the applesauce evenly over it. Sprinkle with a little more salt and pepper, and roast, checking every 15 minutes or so to make sure the applesauce doesn't burn. It's fine if it darkens and browns, even turning dark brown, as long as the top doesn't blacken.

Kosher salt and freshly ground black pepper
1 medium onion, sliced
1 carrot, sliced
1 stalk celery, sliced
3 cloves garlic, smashed
3 sprigs fresh sage
3 sprigs fresh thyme
1/2 cup dry white wine
1 cup chicken broth, homemade or low-sodium canned
1 to 2 tablespoons whole grain mustard
1 to 2 tablespoons unsalted butter, chilled and diced
4 cups Applesauce or store bought, recipe follows
2 1/2 pounds tart red skinned apples, such as Macintosh
3 tablespoons sugar
1 tablespoon freshly squeezed lemon juice

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Heat oil in a large oven-proof skillet over medium-high heat. Season pork loin with salt and pepper and lie, fat side down, in skillet. Cook until golden brown on all sides, 2 to 3 minutes per side. Transfer to a plate; set it aside.
