Time 3h10m

Number Of Ingredients 9

1 red chilli
4 garlic cloves
1 tbsp smoked paprika
1 tbsp dried oregano
1 tsp cumin seeds
½ tsp dried chilli flakes, plus a pinch to serve (optional)
100ml red wine vinegar
400g can chopped tomatoes
800g-1kg piece skinless pork shoulder

Steps:

  • Tip all the ingredients except the pork into a small blender or mini chopper, season with salt and blitz until smooth. Sit the pork in a casserole dish and pour over the tomato mixture. Swill the blender out with 200ml water and pour that over too. Leave for at least 1 hr to marinate at room temperature or cover and chill overnight.
  • Heat the oven to 170C/150C fan/gas 3½. Cover the pork with foil and cook in the oven for 2 hrs. Remove from the oven to check - if the sauce is drying out, add a splash more water. Cover again and put back in the oven for another hour or until tender.
  • Shred the meat into the sauce with two forks, discarding any big chunks of fat. Check for seasoning, adding a pinch more salt and chilli flakes, if you prefer more heat. Can now be frozen for up to three months. Defrost fully and reheat in a pan over a low heat, with a splash more water if needed. Serve in buns, on top of jacket potatoes or in tacos.

Chicken:
1/4 cup chopped fresh cilantro
1 2-inch piece fresh ginger, peeled, thinly sliced

1 11 3/4 x 8 1/2 x 1 1/4-inch disposable aluminum baking pan (to catch drips)
Ingredient info: Bottled piri-piri sauce is available at specialty foods stores and online from africantradingco.com. Choose the heat level that suits you, keeping in mind that the mild version still has a nice kick to it

Steps:

  • For glaze:
  • Melt butter in small saucepan over medium-high heat. Add cilantro and garlic; cook until garlic begins to brown, about 2 minutes. Add piri-piri sauce and lemon juice. Reduce heat to medium-low; simmer 2 minutes. DO AHEAD: Glaze can be made up to 1 day ahead. Cover and chill. Rewarm before using.
  • For chicken:
  • Finely chop cilantro, ginger, shallot, and garlic in processor. Add piri-piri sauce, 1/4 cup oil, lemon juice, coarse salt, and pepper; process marinade to blend.

Open chicken like book; place skin side down in single layer in dish. Pour remaining marinade over. Cover; chill at least 4 hours or overnight, turning chicken occasionally.
  • Remove top rack from barbecue. Prepare barbecue (medium heat). If using 2-burner gas grill, light 1 burner. If using 3-burner gas grill, do not light center burner. If using charcoal grill, light briquettes in chimney and pour onto 1 side of lower grill rack. Place disposable aluminum pan on unlit part of grill. Place upper grill rack on barbecue; brush with oil.
  • Remove chicken from marinade. Arrange skin side up on grill rack above drip pan. Cover barbecue; grill until skin is browned and instant-read thermometer inserted into thickest part of thigh registers 165°F, turning often, about 40 minutes. Transfer to platter. Pour warm glaze over.

ROAST PORK WITH MILK

Roast Pork With Milk image

A bistro basic that the critic Bryan Miller brought to The Times in 1988 with the help of Pierre Franey, this luscious roast of pork comes from the kitchen of Adrienne Biasin, who for years ran a homespun and legendary restaurant in Paris, Chez la Vieille. The meat is first browned over the stovetop to sear in the moisture, then braised slowly in onions and milk. The pan juices are set aside to form the base of a gravy, and the roast is finished in the oven. It takes some time, but is beyond easy to make, and pairs well with a glass of Beaujolais and dreams of travel. (Sam Sifton)

Time 3h30m

Yield 4 servings

Number Of Ingredients 6

1 3-pound boneless loin of pork
Salt and freshly ground pepper to taste
1 tablespoon olive oil
12 small white onions, about 3/4 pound, peeled
1 quart milk
1/4 cup heavy cream

Steps:

  • Rub the pork with salt and pepper.
  • Heat the oil in a Dutch oven. Brown the pork well in the oil on all sides over medium heat for about five minutes. Add the onions, then stir and brown for five minutes more.
  • Drain off all the fat. Add the milk and cover. Bring to a boil and simmer over low heat for one-and-a-half hours. Remove the lid and cook another one-and-a-half hours until the milk is almost evaporated.
  • Meanwhile, preheat the oven to 425 degrees.
  • Strain the milk gravy into a saucepan, add the cream and bring to a simmer. Save the onions and the milk residue. Place the roast in the oven and cook 10 minutes or until brown.
  • Slice the meat and serve it with the gravy spooned over and the onion mixture on the side.

Tips:

  • Choose the right cut of pork: A shoulder or butt roast is a good choice for this recipe, as it has a good amount of fat and connective tissue that will help keep the pork moist and flavorful during cooking.
  • Make sure the pork is well-seasoned: The piri piri sauce is flavorful, but it's important to season the pork well before cooking so that it has a chance to absorb the flavors.
  • Don't overcrowd the pan: When roasting the pork, make sure there is enough space around the pork so that it can brown evenly.
  • Roast the pork until it is cooked through: The internal temperature of the pork should reach 145 degrees Fahrenheit before you remove it from the oven.
  • Let the pork rest before slicing: Once the pork is cooked, let it rest for 10-15 minutes before slicing. This will help the juices redistribute throughout the pork, making it more tender and flavorful.

Conclusion:

Roast pork with piri piri is a flavorful and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The combination of the spicy piri piri sauce and the tender, juicy pork is sure to please everyone at the table. Serve the pork with your favorite sides, such as roasted potatoes, steamed vegetables, or a fresh salad.
