1 tablespoon pork rub seasoning, or to taste
¼ teaspoon Chinese five-spice powder
1 (3 pound) pork loin roast
2 medium sweet potatoes, peeled and cut into bite-size pieces
½ cup brown sugar
3 tablespoons butter
salt and ground black pepper to taste

Steps:

  • Mix pork rub seasoning and Chinese five-spice powder together in a small bowl. Rub all over pork roast.
  • Place sweet potatoes into the bottom of a slow cooker; add brown sugar and butter. Place roast on top and season with salt and pepper.

  • Heat oven to 375°F. In 1-quart saucepan, cook basting sauce ingredients over low heat 3 to 4 minutes, stirring occasionally, until marmalade is melted.
  • In 15x10x1-inch pan, place chicken breasts. Brush with half of the basting sauce. In medium bowl, toss potatoes and onion with oil; place around chicken. Bake 25 minutes.
  • Meanwhile, in small bowl, soak cranberries in 1/4 cup orange juice.

1 shoulder butt pork roast (boneless), about 3 pounds
2 cups water
2 tablespoons dark soy sauce
1/2 teaspoon Tabasco sauce
2 tablespoons red-wine or cider vinegar
2 tablespoons honey
1 teaspoon cumin
2 pounds yams (about 4)
1 pound onions (about 2 large)
6 large cloves garlic, peeled

Steps:

  • Place the pork roast in a cast-iron or enamel casserole with a lid. Add the water, soy sauce, Tabasco, vinegar, honey and cumin. Bring to a boil, reduce the heat to very low and boil gently, covered, for 1 hour.
  • Meanwhile, peel the yams and cut into 1 1/2-inch slices. Peel the onions and cut each into 4 to 6 pieces, depending on size. Preheat the oven to 375 degrees.
  • After the pork has cooked for 1 hour, add the yams, onions and garlic. Bring back to the boil and continue boiling, covered, on top of the stove for about 15 minutes. Uncover and place the casserole in the center of the oven. Cook for 45 minutes, turning the meat in the juices every 15 minutes. At the end of the cooking period, the juices should be dark and concentrated, the meat tender when pierced with a fork and the vegetables very soft.
  • Serve directly from the casserole, cutting the meat at the table.

a 4-pound boneless pork loin roast
4 1/2 tablespoons all-purpose flour
1/4 cup pure maple syrup
4 pounds sweet potatoes
3 tablespoons unsalted butter, softened

Steps:

  • Preheat oven to 350°F. Pat pork dry and season generously with salt and pepper. Sprinkle center of a flameproof roasting pan with 1/2 tablespoon flour. Set pork on flour in pan and roast in middle of oven 40 minutes. Brush pork with some maple syrup and roast, brushing with maple syrup every 10 minutes, until a thermometer inserted 2 inches into center of meat registers 155°F., 20 to 25 minutes more.
  • While pork is roasting, peel potatoes and cut into 1 1/2-inch pieces. In a kettle cover potatoes with salted cold water by 2 inches and simmer until tender, about 15 minutes. Drain potatoes in a colander set over a large bowl and reserve 3 cups cooking water. Return potatoes to kettle and mash with a potato masher, or purée in a food processor. Season potatoes with salt and pepper and keep warm.
  • Transfer pork to a platter and let stand, loosely covered with foil, 10 minutes. While pork is standing, skim fat from pan juices. In a small bowl make a beurre manié by kneading together butter and remaining 4 tablespoons flour until smooth.
  • Add 1 cup reserved cooking water to roasting pan and deglaze over moderately high heat, stirring and scraping up brown bits. Add remaining 2 cups cooking water and any juices that have accumulated on platter and bring mixture to a boil. Whisk in beurre manié and simmer sauce, whisking, until thickened to desired consistency, about 2 minutes. Pour sauce through a fine sieve into a sauceboat.
  • Slice pork and serve with sweet potatoes and sauce.

1 2-4 pound chuck roast
2 Tbsp meat tenderizer plain
1 Tbsp toasted cumin
1 Tbsp adobo
2 clove fresh garlic, minced
1 Tbsp onion powder
2 Tbsp peppercorn medley
1 tsp red pepper flakes
1/2 c dark brown sugar
GRILLED SWEET POTATOES
4 large fresh sweet potatoes, peeled and quartered
4 Tbsp dark brown sugar
1/4 c garlic flavored olive oil
1/2 c chopped fresh cilantro
1 tsp sea salt
BLACK BEANS
1 can(s) black beans, drained and washed
1/4 c chopped fresh cilantro
GARNISH
4 large limes, quartered
1/2 c fresh cilantro, chopped

Steps:

  • 1. Rub chuck roast on both sides with meat tenderizer then place on platter to rest.
  • 2. Add toasted cumin, adobo, minced garlic, onion powder, and ground peppercorn medley, red pepper flakes, and dark brown sugar; mix well.
  • 3. Coat both sides of chuck roast and place uncovered in refrigerator for 30 minutes to 1 hour.
  • 4. While roast is resting start sweet potatoes. Peel and quarter sweet potatoes.
  • 5. Fill a 4-quart pot 2/3 with water and add salt. Place on medium-high heat.
  • 6. Add peeled and quartered sweet potatoes and cook for 10 minutes.
  • 7. Remove from pot and place on foil-lined pan. Drizzle with garlic flavored olive oil and sprinkle with fresh cilantro and dark brown sugar. Set aside.
  • 8. Using a charcoal grill, build a medium-hot fire on one side of grill to place roast. Then place aluminum foil with sweet potatoes on side without fire. Make sure you poke at least 12 holes in foil so smoke and heat get to all potatoes. Close cover and grill for 7 minutes.
  • 9. Then turn chuck roast and grill another 7 minutes. Turn potatoes each time you turn roast. Potatoes need to be fork tender so they may need an extra few minutes.
  • 10. Remove roast to a baking sheet tent with foil and place in a 375 degree preheated oven to bake for 20-30 minutes.
  • 11. If you like your meat medium to well, you may want to leave in oven longer. We like it pink in the middle remove from oven to rest. Place sweet potatoes and black beans in large bowl add the juice of one lime and fresh cilantro and toss gently.
  • 12. Remove tent from roast and slice on the diagonal place in center of platter spoon sweet potatoes and bean mixture around sliced roast and squeeze the juice of 1 lime over entire platter. Cut 2 limes into quarters and place over and around dish.

1 tablespoon oil
1 medium onion, sliced
2 lbs sweet potatoes, peeled and sliced

1 1/2 teaspoons beef bouillon granules

  • Trim the fat from the pot roast. Heat oil in a skillet and brown the meat on all sides.
