1 tablespoon red wine vinegar
½ teaspoon salt
¾ tablespoon ground black pepper

  • Bake in the preheated oven until the cloves are tender and nicely browned, about 1 hour. Remove, and allow to cool to room temperature.

Roasted Garlic-Asiago Dip With Cheese Crackers image

Provided by Anne Burrell

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 9

1/2 cup grated asiago cheese (about 2 ounces)
1/4 teaspoon cayenne pepper
1 pound prepared pizza dough, at room temperature
All-purpose flour, for dusting
1 large egg
1 head elephant garlic
1/2 cup grated asiago cheese (about 2 ounces)
Kosher salt
5 to 6 tablespoons extra-virgin olive oil

Steps:

  • Make the crackers: Preheat the oven to 350 degrees F. Combine the asiago and cayenne in a small bowl. Dust the pizza dough lightly with flour, then run it through a pasta roller, adjusting the setting thinner each time and dusting with more flour as needed, until about 1/8 inch thick.
  • Lightly beat the egg and 1 tablespoon water in a bowl. Brush the dough with the egg wash and sprinkle liberally with the asiago-cayenne mixture. Using a pizza wheel, cut the dough crosswise into triangles. Place the dough triangles on a baking sheet and bake until golden, 10 to 12 minutes. Let cool on the baking sheet.
  • Meanwhile, make the dip: Place the garlic in a small baking dish and roast in the oven until very soft when squeezed, about 40 minutes; let cool 10 minutes. Cut the top off the garlic and squeeze the roasted cloves out of the skin.
  • Place the roasted garlic in a food processor, add the asiago and season with salt. With the motor running, drizzle in the olive oil. Drizzle in up to 1/4 cup water if the dip is too thick. Taste and make sure it is delicious; re-season if needed. Serve with the crackers.

Tasty Garlic Asiago Spread with Crackers: Simple Recipe with Helpful Cooking Techniques

The given article shares a delectable recipe for a creamy and flavorful Garlic Asiago spread paired with homemade crackers. Here's a detailed summary with additional tips and a conclusion, presented in optimized, search engine-compliant format:
    Garlic Asiago Spread:
  • Ensure that the cream cheese is properly softened before combining the ingredients. Room temperature cream cheese blends smoothly, resulting in a better texture.
  • Use freshly grated Parmesan cheese. Pre-packaged, grated cheese often contains additives that can affect the spread's taste and texture.
  • Adjust the amount of mayonnaise to achieve the desired spreadability. If you prefer a thicker spread, use less mayonnaise; for a runnier spread, add a bit more.
  • Fresh herbs like parsley, chives, or thyme can enhance the spread's appearance and taste. Add a sprinkle before serving.
  • Crackers:
  • Work the butter into the dry ingredients until small, crumb-like pieces form. This technique, known as "pinching," helps achieve a flaky texture in the crackers.
  • Chilling the formed crackers in the freezer before cutting helps prevent smudging and makes the cutting process easier.
  • Baking the crackers at a low temperature ensures even browning and helps prevent overcooking.
Conclusion: Indulge in the delightful combination of the Garlic Asiago spread and homemade crackers. With a creamy, cheesy spread complemented by crunchy, buttery crackers, this recipe offers a delicious treat for any occasion. The versatility of the spread makes it perfect for sandwiches, wraps, or as a dipping accompaniment. Elevate your culinary skills by experimenting with different herb or spice additions to create unique flavors.
