Time 55m

Yield 4 servings

Number Of Ingredients 8

3 heads celeriac, approximately 2 1/2 to 3 pounds
1 tablespoon olive oil
4 cloves garlic, peeled and sliced
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
5 cups water
2 tablespoons unsalted butter
1/4 cup heavy cream

Steps:

  • Brush excess dirt off of the celeriac. Cut off the bottoms and tops, cut into quarters and peel. Rinse in cool water if there is any remaining dirt or debris. Cut into 1/2-inch thick dice.
  • Heat the olive oil in a 4-quart saucepan over low heat just until it shimmers. Add the celeriac, garlic, salt and pepper and cook, stirring frequently, just until it begins to soften, approximately 5 minutes. Increase the heat to medium-high and add the water. Bring to a boil and cook until the celeriac is tender and easily pierced with a fork, approximately 20 minutes. Drain the celeriac through a colander and return to the pot. Using a stick blender, puree until no lumps are present, approximately 1 minute. Place the butter and heavy cream into a microwave proof bowl and heat just until the butter is melted, approximately 45 seconds. Add the cream and butter and continue to puree with the stick blender for another minute. Serve warm.

CELERY ROOT PUREE

Celery Root Puree image

I joke that celery root tastes like celery if celery actually tasted good; for the most part, this is true. The flavor is quite mild and pleasant, and the texture is somewhat similar to mashed potatoes. This simple puree is a very versatile side dish, but the tasty root will also work sliced thin and layered in a gratin, either with or without potatoes. I hope you give this great fall and winter vegetable a try soon.

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 2

10 garlic cloves, unpeeled
2 tablespoons olive oil

Steps:

  • preheat oven to 375*F.
  • wrap garlic cloves in aluminum foil package and cook for 1 hour in oven.
  • remove cloves from foil and peel.
  • puree garlic in food processor, add olive oil and blend until incorporated.
  • store garlic puree in glass jar with tight-fitting lid.
  • refrigerate.
  • use in preparation of sauces or with meats.

Tips:

  • Choose the right celeriac: Look for a celeriac that is firm and heavy for its size, with no blemishes or cracks. The smaller the celeriac, the more tender it will be.
  • Peel the celeriac carefully: The celeriac's skin is very thin, so it's important to peel it carefully to avoid wasting any of the flesh. You can use a sharp knife or a vegetable peeler to remove the skin.
  • Cut the celeriac into even-sized pieces: This will help them cook evenly. Aim for pieces that are about 1-inch thick.
  • Roast the celeriac at a high temperature: This will help to caramelize the natural sugars in the celeriac and give it a delicious roasted flavor. Aim for a temperature of 425 degrees Fahrenheit.
  • Add some flavorings to the celeriac: You can add herbs, spices, or other flavorings to the celeriac before roasting it. Some popular options include garlic, thyme, rosemary, and olive oil.

Conclusion:

Roasted garlic celeriac puree is a delicious and versatile dish that can be enjoyed as a side dish, appetizer, or main course. It's a great way to use up leftover celeriac, and it's also a healthy and nutritious dish. With its creamy texture and slightly sweet flavor, roasted garlic celeriac puree is sure to be a hit with everyone at your table.
