Time 1h40m

Yield 6

Number Of Ingredients 15

1 teaspoon olive oil
1 onion, chopped
2 cloves garlic, minced
3 red bell peppers
4 large tomatoes - peeled, seeded and chopped
1 ½ teaspoons dried thyme
2 teaspoons paprika
⅛ teaspoon white sugar
6 cups chicken broth
salt and pepper to taste
1 pinch ground cayenne pepper
1 dash hot pepper sauce
2 tablespoons butter
1 ½ tablespoons all-purpose flour
6 tablespoons sour cream

Steps:

  • Roast peppers: rub oil on peppers and put them under the broiler until blackened, turn to get all sides. Put into paper bag and seal. Let rest for 15 minutes, then peel will come right off and core and seeds will fall out. Chop peppers. Reserve one chopped pepper; set aside.
  • Heat olive oil over moderate heat. Add onion and garlic and cook until soft but not brown, about 5 minutes. Stir in tomato, bell peppers (except reserved), thyme, paprika, and sugar. Cook over medium-low heat until all the tomato juices have evaporated, about 25 minutes.
  • Stir in chicken stock, salt and pepper, cayenne pepper, and hot sauce (if using). Bring to boiling, lower heat, and simmer, partially covered, for 25 minutes or until vegetables are tender.
  • Strain soup, reserving broth. Place solids in food processor or blender, and process until fairly smooth. Add puree back into broth.
  • Melt butter and stir in the flour, cook for 1 minute. Stirring slowly, add the broth/vegetable mixture. Add reserved chopped pepper and bring to boiling. Lower heat and simmer 10 minutes.
  • Ladle into bowls and add 1 tablespoon of sour cream to each bowl. For a lighter soup, this is also delicious without the sour cream.

HERBED GOAT CHEESE AND ROASTED PEPPER TOASTS

Herbed Goat Cheese and Roasted Pepper Toasts image

A more-than-one-bite hors d'oeuvre, these savory toasts make a satisfying snack to serve with drinks or to take on a picnic. They taste best at room temperature or just barely warm. Roasting the peppers can done a day ahead, as can marinating the goat cheese, making this treat very easy to put together.

Provided by David Tanis

Categories     finger foods, vegetables, appetizer

Time 20m

Yield 10 toasts

Number Of Ingredients 9

1 large red or yellow bell pepper
Kosher salt and black pepper
1 (8-ounce) log or 2 (4-ounce) logs soft goat cheese
1/4 cup extra-virgin olive oil
Fresh thyme sprigs
Fresh rosemary sprigs
Red-pepper flakes
1 day-old baguette or ciabatta loaf
1 garlic clove, peeled

Steps:

  • Roast the pepper: Place the bell pepper directly over the open flame of a gas burner, under the broiler or on a hot, glowing charcoal grill. Let the skin of the pepper blacken and blister, using tongs to turn the pepper frequently. When completely blackened, after 5 to 8 minutes, transfer to a plate to cool.
  • Using a paring knife, cut pepper in half lengthwise. Cut away seeds and stem and discard. Scrape away the skin and discard. Do not rinse. It's OK if a few bits of charred skin remain.
  • Cut pepper halves into long strips about 1-inch wide. Season lightly with salt. (The pepper can be prepared up to 24 hours ahead of serving.)
  • Marinate the goat cheese: Slice the goat cheese log into 10 pieces (each about 3/4-inch thick). Place pieces in a single layer on a plate and pour 1/4 cup oil over.
  • Strip leaves from a few thyme sprigs and a rosemary sprig, roughly chop and sprinkle over the cheese. Finish with a bit of freshly ground black pepper, and a small pinch of red-pepper flakes. Cover and set aside. (This can also be done up to 24 hours ahead.)
  • Set oven to 350 degrees. Cut the baguette on a diagonal into 10 slices, each about 1/4-inch thick. (If using ciabatta, cut into similar-size pieces.) Arrange on a baking sheet in a single layer, then place in oven for about 5 minutes, until bread is barely toasted.
  • Remove from oven and carefully give each toast a light swipe with the garlic clove. Lay a strip of roasted pepper across each toast to cover. Place a goat cheese round in the center of each toast. Spoon the remaining olive oil from the plate generously over each piece of cheese and any exposed toast.
  • To finish, return to the oven and bake, uncovered, until the bread is nicely browned and the cheese has gotten a bit of color, 8 to 10 minutes. Let toasts cool a bit, then arrange on a platter and serve. (They taste best at room temperature or just barely warm.) Toasts can be baked up to 1 hour ahead and popped in the oven to reheat slightly.

ROASTED TOMATO AND GOAT CHEESE SOUP

Roasted Tomato and Goat Cheese Soup image

In this recipe, pungent tomatoes are balanced by goat cheese for a rich fall soup. Goat cheese can seem pricey because, unlike cows, goats roam instead of graze in one spot. Due to their independent nature, goats can't be put into factory farms, which are cheap for farmers but hard on the environment. Most goat farms are small, family-run, and often highly sustainable operations. Find out about your local goat farm's practices and use their cheese in recipes like this, where a little goes a long way.

Yield serves 4

Number Of Ingredients 10

12 ripe tomatoes
2 cloves garlic, peeled and smashed
1 yellow onion, coarsely chopped
1 tablespoon honey
2 sprigs fresh rosemary
2 tablespoons balsamic vinegar
4 tablespoons olive oil
Salt and freshly ground black pepper
1 dried bay leaf
1/4 cup fresh goat cheese

Steps:

  • Preheat the oven to 425°F.
  • Core and quarter the tomatoes and scoop out the seeds, reserving the seeds and cores for the stock. In a large bowl, toss the tomatoes with the garlic, onion, honey, rosemary, 1 tablespoon of the vinegar, 3 tablespoons of the olive oil, and a dash of salt. Spread the mixture on a baking sheet and roast for 40 minutes, stirring occasionally. Remove the rosemary and set aside.
  • Combine the tomato scraps, bay leaf, and 1 cup water in a pot and bring to a boil over high heat. Decrease the heat and simmer, uncovered, for 15 minutes. Strain the stock into a bowl and discard the solids. Rinse the pot and return the stock to the pot. Add the roasted tomatoes. Bring to a boil over high heat, then decrease the heat and simmer, uncovered, for 5 minutes.
  • Let the soup cool for 10 minutes, then pour into a blender. Add the cheese and blend until smooth. With the blender running, add the remaining 1 tablespoon olive oil. Season to taste with salt.
  • Garnish the soup with the remaining 1 tablespoon balsamic vinegar and a few grinds of pepper and serve.

OVEN-ROASTED TOMATOES WITH GOAT CHEESE AND HERBS

Oven-Roasted Tomatoes With Goat Cheese and Herbs image

I love a good oven-roasted tomato, and stuffing them with creamy goat cheese and herbs takes them to the next level. Good as an appetizer or side dish!

Provided by under12parsecs

Categories     Vegetable

Time 1h20m

Yield 12 serving(s)

Number Of Ingredients 9

12 medium tomatoes
1 2/3 lbs fresh goat cheese
1 large egg, lightly beaten
2 garlic cloves, minced
2 tablespoons basil, finely chopped
1 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1/4 cup extra virgin olive oil
1 -2 tablespoon balsamic vinegar, good quality

Steps:

  • Preheat the oven to 425°. Slice off the top 1/2 inch of each tomato and reserve the tops. Scoop out the tomato cores and seeds. Cut a very thin sliver off of the bottom of each tomato to help them stand up straight. Arrange the tomatoes in a 9-by-13-inch glass or ceramic baking dish.
  • In a bowl, combine the goat cheese with the egg, garlic, basil, salt, pepper, and 2 tablespoons of the olive oil. Spoon the goat cheese mixture into the tomatoes, mounding the filling 1/2 inch above the rim. Cover with the tomato tops and drizzle with the remaining 2 tablespoons of olive oil.
  • Bake the tomatoes for 35 minutes, until tender and browned in spots and the cheese is hot. Let stand for 15 minutes. Drizzle each with a bit of the balsamic. Serve warm or at room temperature.

Tips:

  • Choose the ripest, most flavorful tomatoes available. This will ensure that your soup has the best possible flavor.
  • Variety of tomatoes: Use a variety of heirloom tomatoes, each with its unique flavor and color, to create a more complex and interesting soup.
  • Roast the tomatoes and bell peppers before adding them to the soup. This will help to concentrate their flavors and give the soup a smoky, roasted flavor.
  • Don't overcrowd the pan when roasting the vegetables. This will help them to roast evenly and prevent them from steaming.
  • Use a good quality vegetable broth. This will help to enhance the flavor of the soup.
  • Season the soup to taste with salt and pepper. You may also want to add a pinch of cayenne pepper or paprika for a little extra spice.
  • Serve the soup with a dollop of goat cheese and a sprinkle of fresh herbs, such as basil or thyme. This will add a creamy, tangy flavor to the soup and make it even more delicious.

Conclusion:

Roasted Heirloom Tomato, Bell Pepper, and Goat Cheese Soup is a delicious and easy-to-make soup that is perfect for a light lunch or dinner.
