2 tablespoons all-purpose flour
2 tablespoons butter
1 cup chicken stock
3 tablespoons fresh lemon juice

Steps:

  • Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.

2 garlic cloves, peeled divided
1/4 cup minced fresh basil, divided
1 broiler/fryer chicken (3 to 4 pounds)

  • Preheat oven to 375°. Finely grate enough peel from lemon to measure 2 teaspoons. Cut lemon in half; squeeze juice from one half. Set aside. 4 chicken breast halves with skin and bones (8 to 10 ounces each), fat trimmed or 1 whole chicken (about 2 pounds) cut up
Salt and freshly ground black pepper
4 large basil leaves
4 cloves garlic, bruised with the side of a knife
4 thin lemon slices
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F. Place the chicken in a baking dish; sprinkle both sides with salt and pepper and arrange skin side up. Loosen the skin from each chicken breast and slip a basil leaf between the skin and the meat. Add the garlic to the baking dish. Place a slice of lemon on top of each piece of chicken. Drizzle with oil. Bake, basting occasionally with pan juices and turning the chicken and the baking dish occasionally so the chicken browns evenly, 35 to 40 minutes. 3 cups fresh basil leaves
1 stick unsalted butter, at room temperature
1 clove garlic, grated
Finely grated zest of 1 lemon
1 3 1/2-pound chicken
Freshly ground pepper
1 1/2 pounds baby potatoes
1 tablespoon white wine vinegar
1 teaspoon whole-grain mustard
3 tablespoons extra-virgin olive oil
1 head frisee, torn (about 5 cups)
2 plums, cut into 1/2-inch wedges

Steps:

  • Preheat the oven to 425 degrees F and set a wire rack on a rimmed baking sheet. Bring a medium saucepan of salted water to a boil. Add 2 cups basil; cook 30 seconds, then drain and rinse under cold water. Transfer to a food processor and puree with the butter, garlic, lemon zest and 1/2 teaspoon salt until smooth. Set aside.
  • Spatchcock the chicken: Cut along each side of the backbone with kitchen shears; discard the backbone. Open the chicken like a book; flip over. Press down on the backbone to flatten. Gently loosen the skin from the breasts and thighs using your fingers. Transfer half of the basil butter to a bowl and rub all over the chicken and under the skin; season with salt and pepper. Transfer skin-side up to the rack. Roast until the skin is browned and crisp and a thermometer inserted into a thigh registers 165 degrees F, about 45 minutes. Transfer to a cutting board and let rest 15 minutes.
  • Meanwhile, fill a medium saucepan with water; season with salt and add the potatoes. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 12 minutes. Drain and transfer to a large bowl; toss with half of the remaining basil butter and season with salt and pepper.
  • Whisk the vinegar and mustard in a large bowl. Gradually whisk in the olive oil. Add the frisee, plums and the remaining 1 cup basil. Season with salt and pepper; gently toss to coat. Spread the remaining basil butter over the chicken; carve. Serve with the potatoes and salad.

2 cloves garlic, smashed and peeled
2 to 3 tablespoons unsalted butter, room temperature

1 lemon, quartered
1/3 cup dry white wine, or water or chicken stock
1/2 teaspoon dried thyme

Steps:

  • Preheat oven to 425 degrees. Line a roasting pan with a rack, set aside. Rub chicken all over with garlic and then with 2 tablespoons butter. Season inside and out with salt and pepper. Place garlic cloves and lemon pieces inside the cavity. Tie legs together with kitchen twine.
  • Place chicken on rack in prepared pan and tuck the wing tips under. Roast until the juices run clear when the thigh is pierced, 45 minutes to 1 hour. Transfer chicken to a platter, and discard twine. Keep warm.

2 lemons

  • Cut up 1 lemon into 8 pieces and rub the outside of the chicken with the peel side of the pieces and then put the lemon pieces into the chicken with the garlic.

¼ cup lemon balm leaves, divided
¼ cup fresh sage leaves, divided
¼ cup softened butter
salt and pepper to taste
1 (3 1/2) pound whole chicken
1 teaspoon garlic powder
2 tablespoons olive oil

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Set aside 1/3 of the whole lemon balm leaves and 1/3 of the whole sage leaves. Chop the remaining lemon balm and sage. Place the chopped herbs into a mixing bowl with the butter. Season to taste with salt and pepper, and stir until evenly mixed. Loosen the skin of the chicken, and rub the butter mixture underneath the skin, over the breast and legs. This easy to prepare recipe was found in a Cook's Illustrated Magazine. It takes alittle time, but well worth it. I left out the final steps because it wasn't needed for this juicy & best tasting roasted chicken that I have ever come across. I think the secret of the juicyness is that you brine the chicken first. So this is a must for this recipe.

1 cup kosher salt or 1/2 cup table salt
2 quarts water
1 (3 1/2-4 lb) whole chickens
vegetable oil cooking spray
2 medium lemons (small will be fine as well)
6 medium garlic cloves, peeled and crushed
2 tablespoons melted butter
ground black pepper
1 3/4 cups canned chicken broth

Steps:

  • In a large bowl (enough to hold chicken plus two quarts water) disolve salt in water. Add chicken and submerge, covering with lid. I put a small domed lid over chicken before covering so that the whole chicken is under water. Refrigerate for 1 hour. After one hour remove chicken and pat dry with paper towel. Set aside and prepare rack.
  • Adjust oven rack to lower-middle position; heat oven to 375 degrees. Spray V-rack (can use another rack, but chicken must be above liquid, at least 2") with cooking spray and set in flameproof roasting pan or lasagna pan.
  • Cut lemons lengthwise into quarters. Rub garlic in the cavity of the chicken. Add lemons, fit as many as you can without over stuffing. Thread long wooden or metal skewers through flaps to close cavity. Brush breast side up with butter and season GENEROUSLY with pepper. Then do other side. Place chicken breast side down in V-rack and roast chicken for another 40 minutes.
  • Remove roasting pan & chicken from oven and increase temperature to 450 degrees. Using 2 large wads of paper towels turn chicken over to breast side up. Add chicken broth to pan, place chicken back in oven and roast for another 35-40 minutes or until thermometer registers 165 to 170 degrees.
  • Once chicken has finished, "remove lemons", and let sit for at least 10 minutes before carving. Then carve and enjoy.
