Time 40m

Yield 8 servings

Number Of Ingredients 7

1 (2 to 3-pound) side salmon, skin on
2 lemons, juiced
4 tablespoons stone-ground mustard
1 cup shelled pistachio nuts
1/2 cup panko bread crumbs
4 tablespoons canola oil
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the side of salmon on an oven proof baking sheet, skin side down. Mix the lemon juice and mustard together in a small bowl and spread sparingly over the top of the salmon.
  • Coarsely grind the pistachios in a food processer. Add the panko bread crumbs, the oil and salt and pepper, to taste. (The bread crumbs should be slightly wet, as it helps the stick to the salmon.)
  • Sprinkle the pistachio mixture over the mustard to cover the salmon evenly.
  • Put in the preheated oven and bake until the salmon reaches the correct doneness, about 15 to 20 minutes. Remove from the oven to a serving platter.

SMOKED SALMON IN CREAMY WHISKEY SAUCE OVER PASTA

Smoked Salmon in Creamy Whiskey Sauce over Pasta image

This makes a quick yet elegant main course, with rich flavors. The mascarpone cheese can be substituted with cream, but you will need to cook it down for a few minutes after adding to reduce and achieve the proper consistency for the sauce. DO NOT leave the pistachios out, I think they are integral to the dish !

MAPLE WHISKEY BBQ SAUCE

Maple Whiskey BBQ Sauce image

I've tweaked this recipe over the years to something I proudly serve with my pulled pork and ribs. It's also delicious on chicken. As the sauce simmers, it will develop a deep, rich color and flavor. The sauce tastes best if made a day ahead of time.

Tips:

  • Choose the freshest salmon fillet possible. Look for one that is firm to the touch and has a bright pink color.
  • Roast the salmon at a high temperature to get a crispy skin. 400 degrees Fahrenheit is ideal.
  • Don't overcook the salmon. Salmon is a delicate fish, so it cooks quickly. Aim for an internal temperature of 135 degrees Fahrenheit for medium-rare, 140 degrees Fahrenheit for medium, and 145 degrees Fahrenheit for medium-well.
  • Make the maple-whiskey sauce while the salmon is roasting. This will give the sauce time to thicken and develop flavor.
  • Serve the roasted pistachio salmon with the maple-whiskey sauce and your favorite sides. Roasted vegetables, mashed potatoes, or a simple salad are all great options.

Conclusion:

Roasted pistachio salmon with maple-whiskey sauce is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The salmon is cooked to perfection, and the maple-whiskey sauce is the perfect complement. If you are looking for a new way to cook salmon, this recipe is definitely worth trying.
