This simple fish dish is best made with wild salmon, but it works equally well with the farmed sort. It's astonishingly easy. In a hot oven, melt butter in a skillet until it sizzles, add the salmon, flip, remove the skin, then allow to roast a few minutes more. You'll have an elegant fish dinner in about 15 minutes. Don't be afraid to play with herb and fat combinations: parsley, chervil or dill work well with butter; thyme, basil or marjoram with olive oil; or peanut oil with cilantro or mint.

4 tablespoons (1/2 stick) butter
4 tablespoons minced chervil, parsley or dill
1 salmon fillet, 1 1/2 to 2 pounds

2 oranges, sliced into rounds
1 onion, thinly sliced
1 ½ tablespoons olive oil
5 (6 ounce) salmon fillets
1 tablespoon lemon pepper
1 ½ teaspoons garlic powder
1 tablespoon dried parsley
½ cup orange juice
1 ½ tablespoons lemon juice
1 tablespoon honey

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a small bowl or cup, stir together the lemon pepper, garlic powder, and dried parsley. Place the slices from one of the oranges in a single layer in the bottom of a 9x13 inch baking dish. Place a layer of onion slices over the orange. Drizzle with a little bit of olive oil, and sprinkle with half of the herb mixture.
  • Place the dish in the preheated oven, and roast for about 25 minutes, or until the onions are browned and tender. Remove the dish from the oven, and increase the temperature to 450 degrees F (220 degrees C).

2 sprigs fresh rosemary
1/4 cup olive oil
4 cloves garlic, coarsely chopped
2 large red onions, diced
Salt and freshly ground pepper
2 tablespoons butter
1 pound orzo, cooked al dente
3 fresh plum tomatoes, quartered
1 1/2 cups Nicoise olives, pitted
4 cloves garlic, peeled
3 anchovy fillets
1 tablespoon fresh lemon juice
2 tablespoons pine nuts
1/4 cup olive oil
Salt and pepper
4 salmon fillets, 6 ounces each
Salt and pepper
Black Olive Tapenade, recipe above
1/4 cup pure olive oil
Chopped fresh parsley

Steps:

  • Roasted Onions: Preheat oven to 425 degrees F.
  • Combine all of the ingredients, except the onions in a medium shallow baking dish. Add the onions, toss them in the mixture and season with salt and pepper, to taste.
  • Cover the onions with foil and roast for 20 minutes. Remove the foil and continue roasting until tender, about 35 to 40 minutes, basting with the juices several times. In a saute pan place butter and melt. Add orzo and tomatoes. Toss until orzo is cooked through. Place the orzo in a large bowl and spoon the onions and the cooking liquid over the pasta.
  • Tapenade: Place all ingredients in a food processor and process until smooth. Season with salt and pepper, to taste.
  • Salmon: Season the salmon with salt and pepper to taste. Spread 2 tablespoons of the tapenade over each piece of salmon (not on the skin side). Heat 2 tablespoons of olive oil in a large saute pan. Place 4 of the fillets in the pan, tapenade side down, and saute until a crust forms, about 2 minutes. Turn the fish over and continue cooking for about 5 minutes for medium-rare doneness.
  • Serve the salmon with the Roasted onions.

8 6- to 8-ounce salmon fillets (each about 1 1/4 to 1 1/2 inches thick)
2 1/2 cups orzo (rice-shaped pasta; about 1 1/4 pounds)

Steps:

  • Mix first 5 ingredients in processor until well blended but still slightly chunky, occasionally scraping down sides of bowl. Season butter mixture to taste with salt and pepper. Transfer to small bowl. (Olive-mustard butter can be prepared 2 days ahead. Cover and refrigerate. Soften slightly at room temperature before using.)
  • Preheat oven to 400°F. Brush large rimmed baking sheet with olive oil. Arrange salmon fillets on prepared sheet; sprinkle with salt and pepper. Roast salmon just until opaque in center, about 14 minutes.

2 (12 ounce) salmon fillets
1 teaspoon salt
fresh ground pepper, to taste
1 cup pitted black olives, chopped
1/4 cup fresh basil, minced
2 tablespoons olive oil
1 teaspoon honey
1 teaspoon orange juice
1 cup orzo pasta, cooked to package directions
1 oranges or 1 tangerine, peeled,seeded and divided into segments
1 tablespoon toasted sesame seeds (optional)

Steps:

  • Heat broiler to high; place rack 6 inches from heat.

4 salmon, portions
4 cups cooked orzo pasta, cooled
2 cups chopped cucumbers
2 cups halved cherry tomatoes
2 tablespoons capers, drained
3 cups coarsely chopped Baby Spinach
1/3 lb havarti cheese, cubed
1/3 cup vegetable oil
5 tablespoons lime juice
1 tablespoon lime zest
1/4-1/2 teaspoon cayenne pepper
salt and pepper, to taste

  • In a sealable container, add the oil, lime juice, zest and seasonings. Shake well and set aside.
  • Preheat the oven to 350 degrees.
  • On a non stick baking sheet, place the salmon portions.
