4 medium sweet potatoes, peeled and sliced into wedges
1/4 cup extra virgin olive oil, divided
sea salt, to taste

2 teaspoons maple syrup
1/2 teaspoon Dijon mustard

Steps:

  • Preheat oven to 350°F

2 tbsp olive oil
sliced red onions, unpeeled garlic cloves, thyme sprigs or other veg or herbs of your choice (optional)
