Steps:

  • Preheat the oven to 200°c (180° fan/ 400F/ Gas 6) and peel and cut the sweet potatoes into 3cm cubes.

1 large Spanish onion, peeled and cut into cubes

1 ½kg floury potatoes (such as Maris Piper, King Edward or Desirée), peeled and cut into halves or quarters, depending on size
100ml olive oil
2 tsp smoked paprika

Steps:

  • Heat oven to 200C/180C fan/gas 6. Add the potatoes to a pan of cold salted water, bring to a boil, then simmer for 5 mins until partly tender. Drain and steam dry for a few mins in a colander.
  • Return the potatoes to the saucepan, and add the oil, paprika and plenty of salt and pepper. Smoked paprika is a Spanish cousin to the more widely used sweet Hungarian paprika. It's made from pimiento peppers that have been dried and smoked over an oak fire, then ground into a fine powder. You'll sometimes see it called pimenton, smoked pimenton, Spanish paprika, or any variation of those names. You can always recognize this spice by its deep red color and powerful smoky aroma. Most sweet potatoes are huge, so figure 1/2 potato (or even 1/4) per person. I prefer the way the wedges look, so I cut them in quarters. This recipe is for 8 or 16, depending on what else you plan to serve.

(Don't worry if your grocery store only sells "yams", in north America yams and sweet potatoes are the same thing)

4 lbs sweet potatoes or 4 lbs orange yams
1/3 cup fat free cream (or condensed milk, or real cream)
4 tablespoons butter
1/2 teaspoon smoked paprika (sweet or hot is fine)
