WHOLE STRIPED BASS
Steps:
- Preheat the oven to 500 degrees F.
- Trim the fins from the fish, rinse and pat dry. Set aside.
- Rub the bottom of a roasting pan with 1 tablespoon of the olive oil. Place 1/2 of the parsley, dill, lemon and onion in the center of the roasting pan. Make sure that this mound of aromatics is high enough to prevent the fish from touching the bottom of the pan. Rub the fish inside and out with 1 tablespoon of the oil. Season the fish inside and out with the salt and pepper and lay on the bed of aromatics. Place the second half of the aromatics on top of the fish and drizzle with the remaining tablespoon of olive oil. Cover the roasting pan tightly with aluminum foil and cook for 30 to 35 minutes or until the fish reaches an internal temperature of 120 degrees F on an instant-read thermometer. Remove from the oven and allow to sit for 10 minutes before transferring whole to a platter lined with the additional fresh parsley. Serve immediately.

Steps:
- Season the cavity and exterior of fish with salt and pepper. Cover with plastic, and refrigerate for 1 hour.
- Preheat oven to 450 degrees. Lightly brush with oil a baking dish that is just large enough to hold fish without crowding. Divide thyme, rosemary, and parsley evenly between each fish, and place inside cavity. Place 2 bay leaves in cavity of each fish, and place remaining 2 bay leaves in baking dish. Sprinkle scallions over and around fish; drizzle with olive oil.
- Transfer to oven and roast 15 minutes. Continue to roast, checking every few minutes, until the thickest part of the fish is just firm, about 5 minutes more.
- Drizzle fish with lemon juice and transfer to a cutting board; set baking dish aside. Working from the head to the tail, cut along backbone to separate the flesh from the bone. Carefully lift top fillet and transfer to a plate. Lift and discard bones. Gently lift second fillet to same plate. Repeat process with remaining fish. Drizzle with any pan juices before serving.

Steps:
- Position rack in center of oven and preheat to 400°F. Boil wine in medium saucepan until reduced to 1 cup, about 5 minutes. Remove from heat and reserve.
- Generously brush 18x12x1-inch baking sheet with olive oil. Arrange fennel slices in single layer on prepared baking sheet. Top with onion slices in single layer. Sprinkle with salt and freshly ground black pepper. Drizzle 4 tablespoons oil over vegetables.

Pour enough olive oil into extra-large skillet to reach depth of 1/4 inch; heat over medium-high heat until oil is very hot. Working with 1 fish at a time, add fish to skillet and fry until golden crust forms on skin, about 3 minutes per side. Carefully place fish atop vegetables on baking sheet. Gently stuff cavity of each fish with 2 crushed garlic cloves, then 1/4 cup chopped parsley. Pour reserved wine over vegetables on baking sheet.

Transfer fish to large platter; cover with foil to keep warm. Increase oven temperature to 475°F. Continue to bake vegetables uncovered until tender and tomatoes are very soft and beginning to color in spots, about 15 minutes longer.
- Arrange vegetable mixture around fish on platter. Drizzle with 2 tablespoons oil. Sprinkle chopped fennel fronds over fish and serve.
MARINATED SALMON WITH SALMORIGLIO SAUCE
This recipe was taken from the September 2007 issue of Food & Wine, and is just lovely. Cooking times may vary depending on what type of fish you choose to use. When I made this I used 7 ounce Salmon filets and cooked them for about 13 minutes on each side, and then I put them under the broiler for about 2 minutes just to crispen up the breadcrumbs. We really enjoyed this dish, and I hope you do too!

Steps:
- Preheat oven to 400 degrees.
- Sprinkle a little bit of the vinegar on the fish filets, rinse them and pat them dry on a paper towel.
- Rub a little bit of salt into the filets.
- Place the fish into an oven safe casserole dish.
- On one side sprinkle the filets with half of the lemon juice and then coat them with half of the bread crumbs.
- Note if you need more than 1/3 of a cup of bread crumbs use them it's up to your taste. I also used italian bread crumbs and they were very tasty.
- Drizzle the filets with olive oil. Make sure that all of the bread crumbs are coated in olive oil even if you need to use more than the suggested amount so that it crisps up nicely.
- Turn the filets over and repeat steps 5-7 with the remaining olive oil, lemon juice, and bread crumbs.
- Cover the fish and marinade at room temperature for 30 minutes.
- While the fish marinades, make the sauce by adding the thyme, lemon juice, mustard and salt to taste to a food processor and pulse for 1 minute.
- Add the butter and process until smooth.
- Slowly drizzle in the olive oil until the sauce fully incorperates into a smooth mayonnaise like consistency.
- After the fish has marinaded, place the casserole dish uncovered in the 400 degree oven. Again, cooking times may vary depending on what type of fish you use. I cooked the 6 oz 1-1 1/2 in thick salmon filets that I used for 13 minutes on each side, and then broiled them on one side for 2 minutes to give the crust some color. You could also grill the fish if you prefer.
- Serve the fish with the sauce drizzled over them.
- Enjoy!

Steps:
- For the fish, combine the peppers, sugar and rosemary. Use a sharp knife to make crosshatch marks on the skin of each fish fillet. Rub the spice mixture into the skin and marinate for 1 hour.
- Meanwhile, preheat oven to 375 degrees. Place garlic and shallots in a small baking dish. Sprinkle with salt, pepper and olive oil. Cover with aluminum foil and bake until soft, about 30 minutes. Let cool to room temperature. Peel garlic and shallots and puree in a food processor with the heavy cream. Set aside.
- While garlic mixture roasts, make the leeks: Combine the water, sugar and lemon rind in a medium saucepan. Cook over medium heat until the mixture turns a golden color. Have an oiled baking sheet ready. Stir the leeks into the caramel and immediately scrape onto the baking sheet. Cool. Separate the leeks and set aside.
- To make the vinaigrette, place all ingredients except the chives in a blender and blend until well combined. Stir in chives and set aside. Melt the butter in a large nonstick skillet over medium heat. Add the oil. When the pan is hot, add the fish, skin side down, and cook until browned, about 2 to 3 minutes. Turn the fish and cook until the fish is firm to the touch, about 1 to 2 minutes.
- Place even portions of the shallot and garlic puree in the center of 6 plates. Place the fish over the puree. Sprinkle with the caramelized leeks. Pour some of the vinaigrette on each plate in a circle around the fish. Serve immediately.
GARLIC-ROASTED STRIPED BASS
Steps:
- Preheat oven to 500°F and put a large shallow baking pan in middle of oven.
- Cut 3 deep slits (down to bone) crosswise on each side of fish and put fish on a tray. Rub fish inside and out with 2 tablespoons oil. Cut a garlic clove in half and rub all over skin of fish. Thinly slice all garlic and insert into slits and inside fish. Squeeze lemon juice over both sides of fish and season with salt and pepper.
- Quickly brush hot baking pan with remaining tablespoon oil and transfer fish to pan (the pan should be hot enough to sizzle). Roast fish in middle of oven until just cooked through, 18 to 20 minutes.
- To serve, remove top fillet from each fish by cutting through skin along top edge of backbone and along belly. Carefully slide a large metal spatula between backbone and fillet and invert onto a platter. Pull out backbone, starting from tail end, and discard. Transfer bottom fillets to platter.
Tips:
- Choose the freshest striped bass you can find. Look for fish with bright, clear eyes and firm, shiny skin.
- Rinse the fish thoroughly inside and out with cold water and pat dry with paper towels.
- Make sure to score the fish deeply on both sides so that the marinade can penetrate the flesh.
- Use a flavorful marinade that will complement the delicate flavor of the fish. The recipe in the article uses a simple mixture of olive oil, lemon juice, garlic, oregano, and thyme.
- Let the fish marinate for at least 30 minutes, or up to overnight.
- Preheat your oven to the correct temperature before cooking the fish. The recipe in the article calls for roasting the fish at 400 degrees Fahrenheit.
- Roast the fish for the recommended amount of time, or until it is cooked through. The flesh should be opaque and flake easily with a fork.
- Serve the roasted striped bass immediately with your favorite sides. Some popular options include roasted vegetables, rice, or potatoes.
Conclusion:
Roasted whole striped bass with salmoriglio is a delicious and impressive dish that is perfect for a special occasion. The fish is roasted until it is perfectly cooked, and the salmoriglio sauce adds a bright and flavorful touch. This recipe is easy to follow and can be tailored to your own taste preferences. With a little planning, you can have this delicious dish on your table in no time.
