This is a recipe in the 'old Southern' tradition, where almost nothing is exact and you just make sure it 'tastes right.' The longer everything simmers, the better the flavor. Serve hot.

AUNT DOROTHY'S RUSSIAN TEA

Aunt Dorothy's Russian Tea image

When I was growing up I always looked forward to the Russian Tea that my Aunt Dorothy made every Christmas Eve. As soon as the weather turned chilly, I would start longing for a hot, steamy cup. It wasn't unitl I was away at college that I finally thought to ask her for the recipe! I place the whole cloves into a tea ball strainer so they're easy to remove when the tea is ready. • Steep the tea leaves for the right amount of time. The longer you steep the tea leaves, the stronger the flavor of the tea will be. However, if you steep the tea leaves for too long, the tea can become bitter.
  • Add the right amount of sugar. The amount of sugar you add to the tea is a matter of personal preference. However, if you add too much sugar, the tea can become too sweet.
  • Serve the tea hot or cold. You can serve Russian tea hot or cold. If you serve the tea hot, be sure to let it cool down slightly before drinking it. If you serve the tea cold, you can add ice cubes or refrigerate the tea before serving.
